Ingredients for Perfect Protein Sourdough Pancakes

To make these protein sourdough pancakes, you’ll need:

– fed sourdough starter: Ensure it’s well-fed the night before for the best results (see notes if you want to try and use unfed starter/sourdough discard).

– eggs: These provide structure and moisture. If you need an egg-free option, flax eggs work well (mix 2 tablespoons ground flax with 4 tablespoons water and let it sit for at least 5 minutes).

– melted coconut oil or avocado oil: Adds richness and helps achieve a golden-brown finish.

– honey or pure maple syrup: For a touch of natural sweetness.

– Greek yogurt or dairy-free yogurt: Boosts protein and adds creaminess.

– vanilla protein powder: For an extra protein boost. I recommend Clean Simple Eats Simple Vanilla (use code “CLAIRE” for a discount!).

– pink Himalayan salt: Enhances flavor & adds essential vitamins & minerals.

– baking soda: Helps the pancakes rise and become fluffy.

Sourdough Discard Pancakes

Yes, you can use sourdough discard or unfed sourdough starter in this recipe. Just ensure it’s well-stirred and has enough activity to help the pancakes rise. I’ve done this and it works just the same! I took my starter from the fridge, added some flour to make sure I had the 2 cups of starter I needed for the recipe, mixed in more water until it was the right consistency and then mixed it well. I did not let it rise or bubble at all and just added that straight to the pancake batter. It worked just as well!

How To Make Sourdough Pancakes

1. Feed Starter: Be sure to feed your starter the night before so it’s nice and bubbly and ready. 

2. Preheat and Prepare: Heat your pancake griddle and grease it with coconut oil or non-stick cooking spray to prevent sticking.

3. Mix the Batter: In a large bowl, combine all the ingredients except the baking soda. Stir until smooth.

4. Add the Baking Soda: Mix in the baking soda. You’ll see the batter become bubbly and frothy, which means it’s ready for cooking.

5. Cook the Pancakes: Pour ¼ cup of batter onto the heated griddle for each pancake. You can add chocolate chips or blueberries if desired. Cook for 2-3 minutes on each side until golden brown. Remember to leave space between pancakes as they will spread.

6. Serve and Enjoy: Top your pancakes with fresh fruit, nut butter, or a drizzle of maple syrup. Serve warm and enjoy!

These protein sourdough pancakes are SO GOOD! You would never know they are sourdough. Our kids devour them. I love how they are getting a solid balanced breakfast too instead of just having empty carbs and sugar like most pancake recipes are. The Greek yogurt and protein powder add so much to this sourdough pancake recipe. Not only do they add some much-needed protein, but they also add flavor and the most perfect fluffy yet moist pancakes. Apologies if you hate that word 😂

Now, you might be asking, “Claire, your recipe calls for a “fed” sourdough starter. Is there a way I can use sourdough discard for this pancake recipe?” My answer is yes! You most definitely can. Sourdough Pancakes Overnight

What makes these protein sourdough pancakes an overnight recipe? You can totally feed your starter in the morning and make the sourdough pancake batter during the day, then store it in the fridge and make the sourdough pancakes the next morning. This makes the morning easy and breezy especially if you have hungry kiddos waking up like we do! 

You can also just feed your starter the night before you know you want to make the sourdough pancakes and then make the pancake batter and sourdough pancakes in the morning. Either option is super quick and easy! Trust me, I can make this batter in no time even with a screaming hungry 1 year old 😂So no need to look up “sourdough pancakes near me” because these sourdough pancakes are the best it’s going to get and super easy to make at home!

Sourdough Pancakes No Egg

You can most definitely make these sourdough pancakes with no eggs. If you don’t have eggs on hand or if you need to make these sourdough pancakes egg-free, you can use 2 flax eggs in place of the regular eggs. 2 Tbs. ground flax + 4 Tbs. water. Mix, sit, and let thicken at least 5 minutes. If you or someone you know has an egg allergy or are vegan, you gotta check out some of my other egg-free dessert recipes!   • 1. Heat up a pancake griddle and grease with coconut oil or cooking spray.
  • 2. In a large bowl add all ingredients except the baking soda. Whisk until a smooth batter forms. 
  • 3. Then, mix in the baking soda (this should cause the batter to get bubbly and frothy).
  • 4. Measure out ¼ cup of batter and place it on the heated griddle (makes 21-27 pancakes: serving size = 3 pancakes). Add chocolate chips or blueberries if desired. Let cook for 2-3 minutes until the bubbles on top start to pop, then flip and cook for another 2-3 minutes until it is fully cooked through. They will spread when cooking so make sure to give space on the pan between pancakes. 
  • 5. Serve with desired toppings such as fresh fruit, nut butter, naturally colored sprinkles, or pure maple syrup. Enjoy! Store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months (see notes for best way to freeze and reheat).

Notes

  1. Can I freeze these sourdough pancakes? Yes! I love freezing these pancakes to have on hand for quick and easy breakfasts. Place them on a parchment-lined baking sheet and flash-freeze them at least 15 minutes. Then place the frozen pancakes in a large zip lock bag for up to 4 months. To reheat: place the frozen pancakes in the microwave for 30 seconds- 1 minute and enjoy. 
  2. Flax Egg- if you don’t have eggs on hand or if you need to make these sourdough pancakes egg-free, you can use 2 flax eggs in place of the regular eggs. 2 Tbs. ground flax + 4 Tbs. water. Mix, sit, and let thicken at least 5 minutes.

    How can these be flourless if you use a sourdough starter? Do you have a gluten free sour dough recipe? This whole recipe is misleading… as written it’s not vegan or egg free?

      Hi Holly! Sorry you felt the recipe was misleading, that was not my intention. I call them flourless because you don’t need to add any extra flour to the batter since it is just the fed sourdough starter which has already been fermented and broken down to make it more gut friendly. And the options for this recipe are vegan and egg free. They can easily be made vegan and egg-free with the notes I added to the recipe card 🙂 I hope that’s helpful.         Is there a substitute for the yogurt or can you forgoe it and add extra moisture another way? DF yogurts not often in our house and would like to be able to make these on the fly some mornings. Thanks

          Hi Ashley! Yes you can really substitute a lot of different things for the yogurt. I just liked that it added even more protein. Some different subs you can do are: unsweetened applesauce, canned pumpkin puree, mashed sweet potato puree, or mashed banana. That way the moisture content stays the same 🙂 I hope you make them!
