These healthy buckeyes are amazing and gluten-free! You would never know they are secretly healthy, high in protein and low in carbs and sugar. Made with just 7 simple ingredients like almond flour, natural peanut butter, and dark chocolate!

How To Make Healthy Protein Buckeyes
These healthy buckeyes are loaded with protein naturally from peanut butter (code “shh20” for free shipping) and almond flour. However, if you want to take them up a notch in protein, feel free to add some unflavored whey protein powder (this is my favorite affordable and clean brand). Another option would be to add a few scoops of unflavored collagen peptides for added protein and health benefits! I LOVE unflavored collagen because it doesn’t add any nasty protein powder flavor to your delish recipes. I’ve used collagen in so many of my recipes like my Healthy Gluten-Free Cookie Cake, Protein Cookie Dough, and S’mores Collagen Cookies!


Gluten-Free Healthy Buckeye Balls Recipe
Who doesn’t love a good gluten-free recipe right?! I’ve tested using both blanched almond flour and cashew flour for this healthy buckeye recipe, but I’m also thinking you can use homemade oat flour too! Low Sugar Buckeyes
You know the original unhealthy buckeye recipes where they call for LOADS of powdered sugar and butter?! Well, not this healthy buckeye recipe. We use pure maple syrup as our natural sweetener for these delicious peanut butter spheres. Healthy Buckeyes (Gluten-Free + 7 Ingredients!)

These healthy buckeyes are amazing and gluten-free! You would never know they are secretly healthy, high in protein and low in carbs and sugar. Made with just 7 simple ingredients like almond flour, natural peanut butter, and dark chocolate!
Ingredients
- 1 Cup Natural Peanut Butter (just peanuts and salt. Code “shh20” for free shipping)
- ¼ Cup Pure Maple Syrup (or honey)
- 1 Tbs Vanilla Extract
- 2 Tbs Water
- 2 Cup Lightly Packed Almond Flour (can sub Cashew Flour)
Chocolate Coating
- ¾ Cup Dark Chocolate Chips (See Note 1 for sugar-free option)
- 2½ tsp Coconut Oil (I use refined)
- Optional: Flaky Sea Salt For Topping
Instructions
1. Line a cookie tray with parchment paper. In a medium/large bowl, mix all wet ingredients until smooth (you can probably use a standing mixer to do this as well).
2. Fold in almond flour and mix until well combined (about 3 minutes).
3. Take about 1-2 Tbs of dough, roll into a sphere, and place on parchment-lined tray. Continue until all dough is gone (should make about 24-26 buckeyes). Place in freezer while you melt chocolate.
4. Melt chocolate and coconut oil using a double boiler or microwave. If microwaving, heat in 25-second intervals, stirring between to ensure it doesn’t burn.
5. Pull buckeyes from freezer and use a fork to dip each buckeye in melted chocolate ⅔ of the way and place back on tray after letting extra chocolate drip off (pushing buckeyes against the side of the bowl is the best way to do this!). You might have a little extra chocolate leftover which you could save for later or drizzle on top if you prefer! Optional: top with flaky sea salt.
6. Place buckeyes in the freezer 10 minutes or refrigerate 15-20 minutes until chocolate has hardened. Store in an airtight container in the freezer for up to 3 months (I eat them straight from the freezer!), or in the fridge for up to 8 days.
Notes
- Sugar-Free Chocolate: To make these buckeyes even lower in sugar, use chocolate chips sweetened with stevia! A good stevia sweetened chocolate will make these buckeyes keto friendly and sugar-free which is awesome. I have a full list of healthy chocolate brands in my Cherry Chocolate Chip Cookie Recipe.
- Almond Flour Substitution: I have not tested this, but I'm almost positive oat flour will work perfectly as a replacement for the nut flour! Let me know if you try this!
