Tips for the Best Vegan Banana Bread
Ripe Bananas: This recipe is absolutely perfect for using ripe bananas. The key is to have very speckled, and soft bananas. The more speckled and ripe they are, the sweeter they will be! (Just don’t wait until they are almost black. That’s when they start to go sour! Been there done that.)
You need 3 ripe bananas for this vegan recipe. If you only have 2 ripe bananas, check out my original Secretly Healthy Banana Bread. Including 3 ripe bananas is the secret to making this bread oil-free! (more on that later) The extra overripe banana also gives the banana bread more natural sweetness; therefore, you don’t need as much coconut sugar. This recipe is flexible and you can add as little or as much coconut sugar to fit your sweetness needs.
Making a Flax Egg: Make sure your flax seeds are not rancid! I used rancid flax seeds in a recipe before and it ruins the whole batter. Store your flax seeds or flax meal in the fridge or freezer for optimal freshness. Don’t know how to make a flax egg? I’ll go over the steps below!


How to Make Vegan Banana Bread Moist without Oil or Butter?
A lot of vegan, “healthy”, and gluten-free recipes, call for a ton of nut flours and coconut oil. Although these ingredients are indeed healthy and contain numerous amounts of healthy fats and nutrients, the fats and calories definitely add up. In the Secretly Healthy Home, we like to make recipes healthy without having to make it calorie packed! That’s why I made this healthy bread oil-free! But how is it so moist then?! Here’s my secret…
Plant Based Milk: Just like my original Secretly Healthy Banana Bread Recipe, this banana bread is completely oil-free! We use plant-based milk instead of oil. This healthy swap cuts down the fat content drastically, while still achieving a very moist bread! Only 2.5 grams of fat per slice of this delicious healthy bread!

Fluffy Vegan Gluten-Free Banana Bread
It’s no secret, gluten-free flour combinations are my favorite! If you’ve tried my Vegan Raspberry Brownies, or my Chocolate Chip Cookie Brownie Skillet, then you know, gluten-free recipes are still delicious (even more delicious than most refined flour recipes). But how do you make vegan banana bread fluffy while still being gluten-free? And without baking soda?
Add the baking powder last! (no baking soda needed!) This tip is a vital one. Instead of adding the baking powder to the batter along with the dry ingredients, this recipe instructs you to add the baking powder last, after mixing all the ingredients together. This step ensures that the baking powder doesn’t get over-mixed.
The result: the fluffiest and most beautiful healthy vegan banana bread you’ve ever laid eyes on.

Vegan Banana Bread (Easy + Gluten-Free)

This Vegan Banana Bread is moist, fluffy and flourless! No oil or eggs are needed either. Made with simple ingredients like oats, almond flour, and coconut sugar. Truly the best healthy banana bread!
Ingredients
- 1 Flax Egg (1 Tbs ground flax seeds + 2 Tbs water) or a regular egg
- 3 Ripe Bananas (1½ Cups)
- 1½ tsp Cinnamon
- ¼ tsp Nutmeg (or to taste)
- ¼ Cup + 1 Tbs Coconut Sugar (or to taste)
- ¼ Cup Plant Based Milk
- 1½ Cups Oat Flour (homemade recipe)
- ½ Cup Blanched Almond Flour (see note 2 for sub opt)
- Dash Pink Himalayan Salt
- 3 tsp Baking Powder
Instructions
1. Make the flax egg: In a medium size bowl, combine 1 Tbs ground flax with 2 Tbs water. Mix and let sit at least 5 minutes until thickened. (See note 1)
2. While the flax egg thickens, Preheat oven 350 F. and line a loaf pan with parchment paper or grease with coconut oil.
3. Once the flax egg has thickened, add the bananas to the bowl and mash with the back of a fork. Mix in cinnamon, nutmeg, coconut sugar, and plant based milk until smooth.
4. Fold in the oat flour, almond flour and pink salt until just combined. Then, fold in the baking powder.
5. Bake at 350 F. for 30-40 minutes until a toothpick comes out with a few moist crumbs.
6. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
Notes
- Tips for grinding flax seeds: You can grind up your flax seeds in a coffee grinder for the perfect ground flax. See my Vegan Raspberry Brownie Recipe for an easy step by step of how to make a flax or chia egg.
- Don't have almond flour? I have had people make this banana bread with just oat flour and they said it still turns out amazing. Sub oat flour at 1:1 ratio for almond flour.
