Frozen Protein S’mores (10.5 g Protein Easy No-Bake Dessert)
Ingredients
- ¾ cup dark chocolate (I love Hu Kitchen)
- 32 graham cracker squares (16 on bottom -16 on top)
- 2, 9 ounce tubs TruWhip Whipped Topping, thawed (or cocowhip for dairy-free) (18 oz total)
- 2 scoop (50 grams) vanilla or cookie dough protein powder (I use Clean Simple Eats – Code CLAIRE)
- 4 scoops (118grams) unflavored grass-fed whey protein powder OR 4 scoops of unflavored collagen (40 grams) I use Clean Simple Eats again
- Optional: 3-4 Tbs. natural creamy or crunchy peanut butter (I love this clean brand)
- Optional: flaky sea salt
Instructions
- Line a rimmed (18 × 13-inch) baking sheet with parchment paper or a silicone baking mat.
- Melt the dark chocolate until smooth, reserving about 1 tablespoon for drizzling over the top later.
- Arrange 16 graham cracker squares on the prepared baking sheet. Spread a thin layer of the melted chocolate over each graham cracker. Set in the freezer while you make the protein filling.

- In a large bowl, gently fold together the thawed TruWhip and both protein powders until smooth, thick, and fluffy.
- Pour the protein marshmallow mixture evenly among the chocolate-covered graham crackers and gently spread into an even layer.

- If using, drizzle a thin layer of natural peanut butter over the protein filling.

- Top with the remaining 16 graham cracker squares to create sandwiches. Gently press down, then drizzle with the reserved melted chocolate (re heat for 30 seconds to make speadable again) and sprinkle with flaky sea salt, if desired.

- Freeze for 1 hour for an extra gooey, creamy center, or 4 + hours (preferably overpreferably night) for the ultimate chewy marshmallow texture (my personal favorite).

So, how to make frozen smores?
The process is so simple!
First, you make the protein marshmallow filling by combining the thawed whipped topping and protein powder.
Then, you arrange half of the graham cracker squares on a parchment-lined baking sheet or freezer-safe tray.
Divide the protein filling between the graham crackers and gently spread it into an even layer.
If you are adding peanut butter, drizzle or spread it over the filling.
Top each one with another graham cracker square to create a sandwich.
From there, the s’mores go into the freezer to firm up.
Once they are cold enough to handle easily, add the melted chocolate and flaky sea salt.
