Ingredients For Dairy-Free Ice Cream Sandwiches
For these cookie dough ice cream sandwiches, we are using one of the most popular recipes from the blog: Peanut Butter Cookie Dough Bars and some homemade nice cream! You can substitute any nut/seed butter to fit your dietary needs. You can also use oat flour, almond flour, or whole wheat flour for the cookie dough! Feel free to use a pre-made cashew ice cream, almond milk ice cream or whatever dairy-free ice cream you prefer. The possibilities are endless!

Healthy Homemade Ice Cream Sandwich Recipe

How to Make Dairy-Free Ice Cream Sandwiches
- Simply make the raw eggless cookies dough, and pop it in the freezer.
- Make your nice cream in a high speed blender or food processor (or use store bought dairy-free ice cream)
- Cut cookie dough down the center, slather icecream on one half then place the other cookie dough half on top.
- Freeze until completely solid. Cut, serve, and enjoy!

Vegan Cookie Dough Ice Cream Sandwiches (No-Bake!)

One of the most delicious summer desserts around but made healthy! These vegan cookie dough ice cream sandwiches are so easy to make and require no baking! Gluten-free, refined sugar-free, dairy-free and paleo friendly!
Ingredients
For the Cookie Dough
- 1 Flax Egg (1 Tbs Ground Flax + 2 Tbs Water)
- 2 Tbs Pure Maple Syrup (or Honey)
- ½ Cup Creamy Peanut Butter (I use Georgia Grinders- code âshh20â for free shipping) (can sub any nut/seed butter of choice)
- ½ Cup Oat Flour (can sub Almond Flour/Whole Wheat Flour)
- 2 Tbs Dairy-Free Mini Chocolate Chips
For the Ice Cream Filling
- 3-4 Frozen Bananas
- 4½ -5 Tbs Plant Based Milk (or Milk of Choice)
- ½ tsp Vanilla Extract or Fresh Vanilla Bean
- *Or Use 1 Pint Dairy-Free Ice Cream Of Choice
Instructions
1. Make the Cookie Dough: Line a 1.5 quart dish with parchment paper (See Note 1).
2. In a medium bowl combine ground flax and water and let sit until thickened (2-5 minutes). Then, stir in peanut butter and maple syrup.
3. Mix in oat flour, and chocolate chips until dough forms.
4. Press cookie dough into pan in an even layer. Place in freezer to set while you make the nice cream filling. Note: If using premade ice cream freeze cookie dough 15 minutes before assembling ice cream sandwiches.
5. Make the Nice Cream: Place nice cream ingredients in high speed blender or food processor and blend until smooth, scraping down the sides when needed. Add milk in small increments to ensure a thick ice cream texture (the less milk the better).
6. Assemble Ice Cream Sandwiches: Remove cookie dough from pan and slice down the center. Scoop ice cream on one half then gently place the other layer of cookie dough on top. Transfer back to pan and allow to freeze for at least 3 hours or overnight until completely frozen solid.
7. Slice into sandwiches and serve (mine made 4 large sandwiches as shown in pictures)! Store in the freezer for up to 6 months!
Notes
- Pan Size: Since we arenât baking this cookie dough, you can use whatever pan you have on hand. My pan made 4 large ice cream sandwiches.
- Grinding flax seeds: You can grind whole flax seeds in a coffee grinder, food processor, or blender.
