This is the best fluffy vegan coffee cake around. This dairy-free coffee cake is also gluten-free, but you would never know because of its tender fluffy texture. It’s sweetened with all-natural sweeteners like coconut sugar and monk fruit for a low-sugar option. This is the only coffee cake recipe you’ll ever need, vegan or not!

Fluffy Vegan Coffee Cake (Gluten-Free + Easy!)

This is the best fluffy vegan coffee cake around. This dairy-free coffee cake is also gluten-free, but you would never know because of its tender fluffy texture. It’s sweetened with all-natural sweeteners like coconut sugar and monk fruit for a low-sugar option. This is the only coffee cake recipe you’ll ever need, vegan or not!

Ingredients

Wet

  • ¾ cup plant-based milk (such as unsweetened almond milk) + 1 tsp. apple cider vinegar (mix together and let sit 3-5 minutes until coagulated. This creates a “vegan buttermilk”)
  • ½ cup (8 Tbs.) melted vegan butter or refined coconut oil (can sub grass-fed butter if not vegan)
  • ½ cup unsweetened applesauce
  • 1 cup granulated monk fruit sweetener or coconut sugar
  • 1 Tbs. vanilla bean paste or vanilla extract

Dry

Optional Maple Cream Cheese Icing

  • ½ cup (4 oz.) softened vegan cream cheese (or low-fat cream cheese)
  • 2 Tbs. softened vegan butter (or grass-fed butter)
  • 2 Tbs. pure maple syrup or honey (+ more if you like sweeter icing)
  • 1 tsp. vanilla extract
  • If needed: 1-3 Tbs. plant-based milk (to give it more of a drizzle consistency)

Instructions

  1. Preheat oven to 350 F. and line an 8x8 inch baking dish with parchment paper.
  2. Make vegan buttermilk by combining plant-based milk and apple cider vinegar in a small jar or bowl. Mix and set aside for 3-5 minutes until coagulated.
  3. In a medium bowl or stand mixer, add all wet ingredients and mix until smooth. 
  4. Next, add in all dry ingredients except baking powder and baking soda. Mix until combined and then gently fold in baking powder and baking soda. The Batter will be thick. Set aside. 
  5. In another medium bowl, add all streusel ingredients except melted coconut oil. Mix until combined then stir in coconut oil. Set aside.
  6. Pour half the coffee cake batter into the baking dish and smooth into an even layer. Add half the streusel on top and spread into an even layer. Spread the rest of the coffee cake batter on top, followed by the streusel topping again. 
  7. Bake at 350 F. for 32-36 minutes until lightly golden and fragrant. Cool at least 20-30 minutes or completely to allow almond flour to set. While the coffee cake cools, make the optional cream cheese icing by combining all ingredients in a medium bowl and beating on high until smooth. Add plant-based milk 1 Tbs. at a time to get the correct drizzle consistency you desire. Top coffee cake with icing and enjoy! Store in an airtight container on the counter for up to 6 days, in the refrigerator for up to 8 days, or freeze for 3 months.

How To Make Vegan Coffee Cake

This vegan coffee cake recipe couldn’t be more easy to make. You only need two bowls. One bowl to make your coffee cake batter and another bowl to make your streusel. The streusel is what will go in the center of the coffee cake and on the top. No need to make three different things! Here are the steps:

  1. Preheat your oven
  2. Make the vegan buttermilk
  3. Make the coffee cake batter
  4. Make the streusel

Vegan Gf Coffee Cake Recipe With No Eggs!

I love this vegan coffee cake recipe too because it doesn’t require any eggs or egg replacers. A lot of my vegan recipes use flax eggs or chia eggs, which I really love working with! However, not having an egg or an egg replacer, just makes this gluten-free vegan coffee cake that much easier to make! I know of so many people who have egg allergies, so this vegan coffee cake truly is the best way to feed and nourish someone with a yummy treat!

Making desserts secretly gluten-free is something I’ve been doing for years now. If you’ve tried my gluten-free gingerbread cookies, Nutella banana bread, or my gluten-free pumpkin bread, you’ll know what I’m talking about. So, when I say this vegan coffee cake is secretly gluten-free, I mean it! No one will be able to tell it’s gluten-free and sweetened with all-natural sweeteners. 

We use a combination of almond flour and gluten-free all-purpose flour to give this vegan coffee cake the perfect amount of fluffiness and tenderness. I love adding almond flour in combination with gluten-free flour because I find it really gives it moisture. Gluten-free flour on its own can leave recipes very dry and yucky, especially after a day or so. With this coffee cake though, it is so moist and stays relatively moist thanks to the almond flour and other wet ingredients! Win, win!

My favorite gluten-free all-purpose flour to use for this vegan coffee cake is King Arthur’s Measure For Measure Gluten-free Flour. It contains xanthan gum which is key! You need to find gluten-free flour with xanthan gum, otherwise, this healthy coffee cake will fall apart. You can also add xanthan gum if you have it on hand and your gluten-free flour doesn’t contain it.

Best Vegan Coffee Cake 

So what makes me claim this vegan coffee cake is the best? Well, first off, I have very trusted taste testers. They are honest family members who always tell me if a recipe is good or needs tweaking. And I kid you not, after I shared a slice of this vegan coffee cake with them, the very next day they asked to have the recipe so they could make it at home! That brought so much joy to my heart and really reassured me that this recipe truly is the best.

And if you know my husband, Will, you know that he is NOT a dessert person. He will pass on all desserts happily. But, when he tasted this coffee cake he was thrilled! Yes, we load up the cinnamon in this recipe. However, if you really want to, feel free to add more cinnamon to your taste! You might just want to call this a vegan cinnamon cake, and I wouldn’t be mad about it. I think another lovely addition would be some chopped-up apples. Dairy-Free Cofee Cake Recipe

Since we use vegan butter and other healthy oils in this vegan coffee cake recipe, it is completely dairy-free! If you don’t have a dairy intolerance though, feel free to use dairy butter or dairy milk for this recipe as well. The results will be the same delicious, tender coffee cake. The thing that gives this vegan coffee cake fluffiness without using dairy is the vegan buttermilk. The apple cider vinegar works inside this recipe to really give the cake a lift! We also use a generous amount of baking powder and baking soda to ensure our gluten-free coffee cake is fluffy.
