Vegan Peanut Butter Blondies (Gluten-Free + Easy!)

These vegan peanut butter blondies are so easy and chewy! You won’t even be able to tell they are vegan and gluten-free. You just need a few simple ingredients like oat flour, pure maple syrup, and peanut butter. You’re sure to devour them in one sitting.

Vegan Peanut Butter Blondies

These vegan peanut butter blondies are so easy and chewy! You won’t even be able to tell they are vegan and gluten-free! You just need a few simple ingredients like oat flour, pure maple syrup, and peanut butter. You’re sure to devour them in one sitting.

Ingredients

Wet

  • 1 flax egg (1 Tbs. ground flax + 2 Tbs. water. Let thicken for 3 minutes.) (or 1 regular egg)
  • ¾ cup peanut butter (no added sugar. I love this brand: code SHH20 for free shipping)
  • ⅓ cup pure maple syrup (I buy mine in bulk)
  • ¼ cup coconut sugar
  • ¼ cup unsweetened applesauce
  • 1 tsp. vanilla bean paste or extract

Dry

Instructions

  1. Preheat oven to 350 F. and line an 8x8 inch baking dish with parchment paper.
  2. Add all wet ingredients to a medium bowl or stand mixer and mix until smooth. Add in all dry ingredients except dark chocolate chunks and mix until combined. Lastly, fold in the dark chocolate chunks.
  3. Transfer blondie dough to the parchment-lined baking dish, top with more chocolate chunks (optional), and bake at 350 F. for 15-18 minutes or until a toothpick comes out clean (mine was perfect after 16 minutes). Let cool for at least 15 minutes before cutting and enjoying. Store in an airtight container on the counter for up to 3 days, in the refrigerator for up to 7 days, or freeze for up to 3 months. 

Notes

  1. Can I use a regular egg for this recipe? Of course! A regular egg should work perfectly if you don’t need to use a flax egg for dietary reasons 🙂
  2. Flour Substitutions: 

Can I use almond flour? I would say almond flour would work for this recipe. The blondies might turn out a little less fluffy and more dense. But overall they should be yum! Let me know if you try it with almond flour.

Can I use coconut flour? No. Sadly coconut flour doesn’t work well for this recipe. Coconut flour absorbs liquids very differently and will not work in this recipe.

Can I use gluten-free flour? I have not tested this, but I think it would work. Make sure your gluten-free flour has xanthan gum or add xanthan gum yourself if it does not. I love this brand for a good 1:1 gluten-free flour. Let me know if you try it!

I brought these vegan gluten-free peanut butter blondies to my women’s Bible study and they were devoured in an hour! Everyone loved them and said they wanted the recipe. Therefore here I am, typing away to give you the best vegan peanut butter blondie recipe.

These blondies are vegan because we use a flax egg instead of a real egg. We also use all-natural sweeteners like coconut sugar and pure maple syrup so your blood sugar doesn’t spike as much as it would with processed white sugar. WIN WIN! The Best Vegan Peanut Butter Blondies

So what makes these vegan peanut butter blondies better than the rest? Let me tell ya. First off, as I said earlier, we use all-natural sweeteners so your blood sugar stays stable. Second, we use oat flour instead of processed white flour. This is big time because instead of getting no nutritional value from this vegan dessert, you’re actually consuming GOOD FOR YOU ingredients! Oats are packed with complex carbs, vitamins, minerals and so much more that will make you feel awesome after eating.

Gluten-Free Peanut Butter Blondies

What I love about these peanut butter blondies are that they are also gluten-free! I love making gluten-free recipes on this site and you all really seem to enjoy them. Gluten-free without tasting gluten-free is my goal 🙂 

You literally can’t tell it’s made with oat flour. One Bowl Healthy Blondies

Are you ready for this? Here’s how to make these vegan peanut butter blondies. Add all wet ingredients to a medium bowl. Mix. Add all dry ingredients to the bowl and mix. Fold in your dark chocolate chips (I love using these! Or Hu Kitchen baking gems or chocolate bar chopped up) Bake. Allow to cool. Enjoy!

    Hey there! Is there a substitution that can be made for the applesauce? Or could it be left out altogether?

      Hi! I wouldn’t leave it out, as it adds moisture to the recipe. You can substitute mashed banana, pumpkin puree or sweet potato puree in place of the applesauce 🙂 Let me know how they turn out when you make them!
