One Bowl Easy Healthy Vegan Oatmeal Chocolate Chip Cookies

If you’ve been here a while you know that I am ALL ABOUT easy recipes. I am not a fancy baker in the least… I’ve got kids, I don’t have the time 😉 This is good news for you though because that means you can make my recipes without having to be an expert baker. This vegan oatmeal chocolate chip cookie recipe is no different. You just need one bowl to make them. Simply add all the wet ingredients and mix. Then add your dry ingredients and mix. Bake, let cool (the hardest part), and enjoy!

Best Vegan Chocoalate Chip Oamteal Cookies 

You don’t need any flour for these vegan oatmeal chocolate chip cookies. Just oats. Yes, that’s right. Just oats! No flour at all! Just make sure you get certified gluten-free oats if you need to 🙂

Who doesn’t love cookies?! Well, actually my husband isn’t a big fan😂 but don’t worry, we are working on it. What’s an even better question is who doesn’t love good gluten-free vegan oatmeal chocolate chip cookies? I know I do! These soft and chewy vegan oatmeal chocolate chip cookies are just that. They are simple to make, so chewy and soft, and leave you feeling satisfied since they are made with all-natural ingredients. You’re going to love them I’m sure of it.

Naturally Sweetened Vegan Oatmeal Chocolate Chip Cookies No Flour

My goal with this recipe was to create an easy, quick, healthy chocolate chip oatmeal cookie recipe that’s naturally sweetened. I wanted to make a recipe requiring minimal pantry staples so these cookies could be made on a dime. I what I mean by easy and quick is you throw everything into one bowl, mix and you’re done! I think this is my easiest recipe yet and the outcome is glorious. I hope you enjoy this recipe!

Now back to these vegan oatmeal chocolate chip cookies. They are honestly the easiest cookies to make ever. You simply put all the wet ingredients in a medium bowl or stand mixer and beat until smooth. Then, add all dry ingredients except the chocolate chips and mix until a cookie dough forms. Add in those dark chocolate chunks and mini chocolate chips (I love using these! Or Hu Kitchen baking gems or chocolate bar chopped up) and bake em’ up! No chilling is required. You can have the perfect gluten-free vegan oatmeal chocolate chip cookies in less than 20 minutes from start to finish my friends!

Vegan Chocolate Chip Oatmeal Cookie Recipe No Egg

Now, with the natural sweetener talk done, I can move on to what makes these oatmeal chocolate chip cookies vegan-friendly. I have tons of vegan recipes on my blog. If you’ve made my creamy vegan chocolate tart, cookie dough ice cream sandwiches, or vegan coffee cake recipes, you’ll know that I don’t mess around when it comes to seriously delicious vegan treats.

Now if you’re thinking you can just go to Trader Joe’s and pick up some vegan oatmeal cookies, you can. HOWEVER, there is no way those Trader Joe’s vegan oatmeal chocolate chip cookies have better ingredients than this recipe. Plus these cookies are quicker to whip up at home than it would take to get in your car and drive to Trader Joe’s. Just trust me on this one 😉

So what makes these healthy oatmeal chocolate chip cookies vegan? It’s simple. We use vegan butter, vegan cream cheese (just a little), and 2 flax eggs to bind them together. Even if you aren’t vegan and you just so happen to not have any eggs at home, this flax egg option is perfect.

That’s actually how I came up with the recipe. I didn’t have any eggs at home so I just quickly whipped up two flax eggs. It doesn’t change the flavor of the cookies at all. It honestly makes them more moist and delicious. I haven’t tested these cookies with another egg replacer or real eggs yet. See the recipe notes if you’re interested in more egg options!

Vegan Chocolate Chip Oatmeal Cookies Coconut Oil Substitution

I have not tested these oatmeal cookies using coconut oil in place of the vegan butter, but that should work just as well! Please let me know in the comments if you do this so I can make a note for other people 🙂

Healthy Vegan Chocolate Chip Oatmeal Cookie 

I am all for balance and eating sugar every once in a while. However, my husband and I have been eating my secretly healthy treats for years now and we don’t even enjoy recipes that use processed white sugar. Not to mention that processed white sugar has zero health benefits and just spikes your blood sugar and makes you feel empty inside.

Anyways, tangent over. All I was trying to say is, honey and pure maple syrup are way better for you and have significantly better health benefits than processed white sugar. Since we are trying to make a healthier oatmeal chocolate chip cookie because it is using just oats, why not go the extra mile and make them fully healthy by using an all-natural sweetener?

What’s to love about these Vegan Chocolate Chip Oatmeal Cookies?

They’re Flourless- yes that’s right, absolutely no flour is used for these cookies. Just quick cooking oats. I typically purchase rolled oats so to make these cookies, I just pulse the rolled oats in my Vitamix blender a few times until the oats are broken up a bit more. I love how we don’t use any white refined flour or even gluten-free flour for these vegan chocolate chip oatmeal cookies. It makes them so easy to whip together.

Soft & Chewy- these vegan chocolate chip cookies are so soft & chewy! Truly unbeatable in texture. 

Naturally Sweetened- We only use coconut sugar to sweeten these vegan oatmeal chocolate chip cookies. Oh, and of course the vegan chocolate chips! I like using either Hu Kitchen or Enjoy Life chocolate chips

Hold Together- I’ve tried many flourless vegan cookies and they simply just fall apart. When recipe testing these cookies it was so difficult to find the perfect balance of ingredients to get them to stick together without being too dry or dense. But the addition of the vegan cream cheese is the secret weapon😉

No Eggs- We use flax eggs for this recipe to keep the cookies vegan. I know so many people with egg allergies too so this recipe is perfect! You can also see the recipe notes for more flax egg swaps. 

Quick & Easy- These vegan oatmeal chocolate chip cookies literally take 20 minutes from start to finish. The hardest part is letting them cool completely before devouring them! Letting them cool is key though. Otherwise the cookies will fall apart a bit. All the chocolate chip oatmeal cookie ingredients get placed in one bowl, and you mix, and bake. That’s it! They really couldn’t be any easier.

Ingredients

Wet

  • 2 flax eggs (2 Tbs. ground flax seeds + 4 Tbs. water. Sit & let thicken 5-10 minutes.)
  • 6 Tbs. melted vegan butter or grass-fed butter
  • ½ cup coconut sugar
  • 2 Tbs. softened vegan cream cheese or regular cream cheese (you can’t taste it, it just helps the gluten-free cookies hold together)
  • 1 tsp. vanilla extract or vanilla bean paste

Dry

Instructions

1. Preheat oven to 350 F. and line 2 rimmed baking sheets with parchment paper. 

2. In a medium bowl or stand mixer, add in all wet ingredients and mix with an electric mixer until combined.

3. Add in all the dry ingredients except dark chocolate chips and beat until combined and a cookie dough forms (the batter will be wet). Mix in vegan chocolate chips.

4. Transfer cookie dough using a medium cookie scoop to parchment-lined baking sheets (makes about 12 cookies). Add a few extra chocolate chips on top of each cookie if desired.

5. Bake at 350 F. for 9-12 minutes or until edges are golden (mine were perfect after 11 minutes). Top with optional flaky sea salt. Let cool on baking sheets for at least 10-15 minutes (otherwise cookies will fall apart). They will hold their shape once fully cooled. Enjoy! Store in an airtight container at room temperature for up to 6 days or freeze for 3 months. 

Notes

Flax Egg: you can substitute the flax eggs for 2 regular eggs or 2 chia eggs. 2 chia eggs = 2 Tbs. ground chia seeds + 4 Tbs. water. I haven’t tested these personally, but they should work well. Let me know if you try either of these so I can add a note for others 🙂 I grind my flax eggs in a coffee bean grinder and store them in the freezer to keep fresh for months. You can also try using Bob’s Red Mill egg replacer.

Vegan Butter: I have not tested these oatmeal cookies using coconut oil in place of the vegan butter, but that should work just as well! Please let me know in the comments if you do this so I can make a note for other people 🙂

Cornstarch: you should be able to substitute tapioca flour or arrowroot powder. Let me know if you try this!
