I took the most popular recipe on my blog, Peanut Butter Cookie Dough Bars, and turned it into a chocolate lovers dream! If you’ve tried those peanut butter bars, you’ll definitely need to try this version next (you can use any nut or seed butter you want too!) We simply added some antioxidant boosting cacao powder to make these cookie dough bars extra chocolatey! Don’t know the difference between cocoa and cacao? No-Bake Healthy Dessert Recipe

Wanting a healthy dessert but not willing to sacrifice turning on your oven? Well, this healthy chocolate almond butter bar recipe is for you! These triple chocolate almond butter bars are no bake! You simply pop them in the freezer to firm up, and BAM! You will have the most delicious clean eating dessert in town without even heating up that oven! How to Get Healthy Bars to Stick Together?

The problem: A lot of healthy cookie dough bar recipes call for both coconut flour and almond flour, but I found when I tried this the bars would fall apart, leaving you with a crumbly mess. Or the healthy recipe would require ½ of melted coconut oil, which is CRAZY PACKED with calories and fat. (I avoid using a crazy amount of oil in my recipes. My solution: Flax eggs! Flax is loaded with fiber, and low in calories! Flax eggs are also completely vegan and gluten-free! Plus, they help this healthy peanut butter cookie dough hold together! It’s a win, win, win!

How to Store No Bake Chocolate Almond Butter Bars

Fridge: Place triple chocolate cookie dough bars in a large zip lock bag or airtight container and keep in the fridge for up to 1 month.

Freezer: My favorite place to keep these chocolate cookie bars is in the freezer. Just pull one out when you’re ready for dessert, and you have a healthy pre-made sweet treat! Convenience is key when trying to live a healthy life, so having these bars on hand in the freezer at all times is life saving! You can store these bars in the freezer for up to 3 months or more!

I wouldn’t recommend storing these bars at room temperature, because the chocolate will melt.

Triple Chocolate Almond Butter Bars- No Bake!

Paleo Chocolate Almond Butter Bars

You only need 6 ingredients to make these easy No Bake Triple Chocolate Almond Butter Bars. It’s shocking how this delicious dessert is healthy, paleo, vegan, gluten-free and refined sugar-free!

Prep Time 5 minutes
Freeze Time 30 minutes
Total Time 35 minutes

Ingredients

Chocolate Topping:

Instructions

1. Line a 1.5 quart dish with parchment paper (See Note 1).

2. In a medium bowl combine ground flax and water and let sit until thickened (2-5 minutes). Then, stir in almond butter and maple syrup. 

3. Mix in oat flour, cacao powder, and pink salt until dough forms. Fold in chocolate chips.

4. Press cookie dough into pan in an even layer. Place in freezer to set while you make the chocolate topping.

5. Melt chocolate and coconut oil in microwave or using a double boiler. If microwaving, melt in 20 second intervals, stirring in between.

6. Pour melted chocolate on top of bars and smooth until covered evenly. Optional: Sprinkle with sea salt crystals.

7. Place cookie dough bars back in freezer to set for at least 30 minutes.

8. Once the chocolate layer has set, pull cookie dough bars from freezer, cut, and enjoy! Optional: Top with flaky sea salt.

9. Store triple chocolate almond butter bars in the fridge for up to a month or in the freezer for up to 3 months. (I eat these bars straight from the freezer!)

Notes

  1. Pan Size: Since we aren’t baking these bars, you can use whatever pan you have on hand. My pan made 18 almond butter squares.
  2. Grinding flax seeds: You can grind whole flax seeds in a coffee grinder, food processor, or blender.
  3. Nut Butter: You can use any nut or seed butter of choice! Use sunflower seed butter to keep these bars nut-free!
