Cookies for breakfast? Yes, please! Now, cookies for breakfast really aren’t a new thing for me. If you’ve tried my Banana Breakfast Cookies or my Chewy Healthy Trail Mix Cookies, you’ll know exactly what I’m talking about. But, SUGAR COOKIE?! This is next level. It literally tastes like a Christmas sugar cookie in oatmeal form. What’s not to love about that?!

I love that this oatmeal is so easy and quick to make on the stove AND it’s made with healthier ingredients. Baked oatmeal is usually my thing, (if you haven’t tried any of my baked oatmeal flavors, they are a MUST!), but this stovetop oatmeal really comes in handy when you don’t have 40 minutes to bake an oatmeal. I love adding a clean protein powder to my oatmeal too because it adds the perfect sweetness and vanilla flavor PLUS gives you much-needed protein to keep you full. Easy Healthy Oatmeal Recipe

Who doesn’t love an easy recipe? I know I do! That might be obvious though, as easy recipes are all I create *cough cough* my Healthy Nutella Banana Bread, Chocolate Chip Coconut Baked Oatmeal, Cookies and Cream Protein Shake, 4-Ingredient Gluten-Free Lava Cakes and that’s just the beginning! But for real, this healthy sugar cookie oatmeal might be up there for one of the easiest recipes I’ve ever created. You’re bound to love it and no one will know it’s made with healthier, more wholesome ingredients!

How To Make Sugar Cookie Oatmeal

This oatmeal is a breeze to make. Simply add everything to a pot on the stove, allow the oats to thicken, and then stir in that kefir! I love topping my healthy oatmeal with some holiday cookie kefir and fun festive sprinkles! You can also top this oatmeal with fresh berries, banana slices, healthy cream cheese icing, or nut butter! Breakfast is served 🙂

Why Kefir?

We add the kefir to give this oatmeal an extra probiotic punch! If you don’t have any on hand, feel free to omit it. If you’ve never tried kefir before, get ready to have your mind blown! We use the Lifeway Kefir brand and love it. It’s so delicious and such an easy snack. My toddler happens to LOVE it and I feel so confident giving it to him as a post-nap snack to sip on. Sugar Cookie Oatmeal

Cook Time 10 minutes
Total Time 10 minutes

Ingredients

Instructions

  1. Add oats, almond milk, water and salt to a medium saucepan. Mix and turn heat to medium. Bring to a simmer and cook uncovered for 5-7 minutes until oats thicken, stirring occasionally. 
  2. Turn heat to low and mix in vanilla protein powder, honey, vanilla and almond extract.
  3. Remove from heat and mix in kefir.
  4. Pour into bowl and top with more kefir, nut butter, sprinkles, healthy cream cheese icing, berries, or any topping of choice! Store in an airtight container in the refrigerator for up to 4 days. Serves 2.
