Wet

  • 2 eggs or substitute 1 flax egg: 1 Tbs. ground flax + 2 Tbs. water, stir and let thicken for 5 minutes.
  • 1 cup whole milk or plant-based milk of choice 280g
  • ½ cup Greek yogurt or dairy-free yogurt, or unsweetened applesauce
  • 3 Tbs. grass-fed butter melted & slightly cooled (avocado oil or melted coconut oil will also work) + extra for greasing the griddle or skillet
  • 2 Tbs. pure maple syrup or honey
  • 1 tsp. pure vanilla extract

Instructions

  • Prepare flax eggs if using. If you’re making the vegan version, mix 1 tablespoons ground flaxseed with 2 tablespoons water in a small bowl. Stir and let sit for 5 minutes to thicken.
  • Whisk wet ingredients. In a large mixing bowl, whisk together all the wet ingredients until smooth and well combined.
  • Add dry ingredients. To the same bowl, add the dry ingredients. Gently stir with a spatula until just combined. The batter should be thick but pourable—do not overmix, as einkorn flour is more delicate than modern wheat.
  • Rest the batter. Let the batter sit for 5–10 minutes. This helps the baking powder activate and gives you extra fluffy pancakes.
  • Heat the skillet. Grease a non-stick skillet or griddle with butter or oil and place over medium heat until hot (around 325°F). Cooking the pancakes low and slow will give you more moist results.
  • Cook the pancakes. Scoop about ⅔ cup of batter per pancake onto the skillet (makes around 12 medium-sized pancakes). Add chocolate chips or blueberries if desired. Cook for 2–3 minutes, or until bubbles form and start to pop on the pancake’s surface and the edges look set. Flip and cook an additional 1–2 minutes, until cooked through.

Protein Powder: Can I omit the protein powder? Yes. Substitute ½ cup einkorn flour in place of the ⅔ cup protein powder. You can also use unflavored protein powder in this recipe. I love using Clean Simple Eats unflavored grass fed whey or their Simply Vanilla protein powder flavor (use code “CLAIRE” for a discount). I haven’t tested a vegan protein powder in this recipe, but I’m sure it would also work. Let me know how they turn out if you try this!
Freezing: You can make these pancakes ahead of time or freeze any leftovers you have in a zip-lock bag. Just make sure the pancakes are fully cooled before putting them in the freezer; otherwise, they will get stuck frozen together. Freeze for up to 3 months.
