How to Make No-Bake Healthy Gender Reveal Cake Pops

These gluten-free gender reveal cake pops are super easy to whip together too! If you’ve been around the Secretly Healthy Home Kitchen a while, you know I’m a BIG fan of no-bake desserts. My most favorite being my Peanut Butter Cookie Dough Bars (also vegan and gluten-free). 

I actually announced how we were having a baby girl for our second child through Instagram when I made these cake pops! You can check out that post here! Simply whisk all the dry ingredients together, then add in the wet ingredients. Stir it all together and roll them into balls. Melt your chocolate and add in your spirulina powder and beetroot powder to make the white chocolate colored! Or you can leave the chocolate white and decorate with sprinkles. Totally up to you. Dip each cake pop stick in the melted chocolate and place it in the center of the cake pops. Then, dunk and decorate those healthy cake pops!

No Bake Cake Pops Without Cream Cheese

There are many things to love about these no-bake gluten-free cake pops. One of them is that they are also vegan because we don’t use any cream cheese or frosting to make them! The thing that holds these cake pops together is a flax egg and some maple syrup. I love using flax eggs to hold my healthy dessert recipes together without adding a ton of oil. I do this same trick in my Vegan Cookie Dough Ice Cream Sandwiches recipe and No-Bake Chocolate Almond Butter Bars too!

Are Starbucks Cake Pops Vegan?

According to what I found via the internet, Starbucks cake pops, or any of their treats, are not vegan. This source actually explains how they aren’t even vegetarian either! Woah. Well, no need to fear my vegan friends, this no-bake gluten-free cake pop recipe is 100% vegan! They are dairy-free and egg-free! Doesn’t get much better than that.

Don’t Have Sticks? Make Gender Reveal Cake Balls!

I know you might be hesitant to make these cake pops because you might not have cake pop sticks laying around your kitchen. You can actually get them off amazon really cheap! That’s where I got my cake pop sticks. But, if you want these cake pops NOW and don’t have sticks, just forego the sticks and make them vegan cake balls! Same taste, just lower to the counter 😉

Healthy Gender Reveal Cake Pops (No Artificial Color!)

These healthy gender reveal cake pops are delicious and colored with all-natural ingredients! No artificial food coloring necessary. They’re healthy, made with all wholesome ingredients, but you would never know. Secretly healthy at its finest. No baking needed either!

Ingredients

For The Cake Pops

  • 1 cup oat flour (I make my own in 3 steps)
  • ¼ - 1 tsp. beetroot powder (for girl) or ¼ - 1 tsp. blue spirulina powder (for boy)
  • 1 flax egg (1 Tbs. ground flax + 2 Tbs. water. Let thicken for 5 minutes)
  • ½ tsp. almond extract
  • 1½ tsp. vanilla extract
  • ¼ cup + 1 Tbs. pure maple syrup (or honey)

White Chocolate Coating

  • 5½ oz. vanilla almond bark (try to find one without artificial flavors) (or non-dairy white melting chocolate)
  • Optional: ½ - 1 tsp. beetroot powder and ½ - 1 tsp. blue spirulina powder (this is if you want to have the white chocolate be pink and blue on the outside too. Or you can leave the outside of the cake pops white)
  • naturally colored sprinkles (my favorite brand!) or pink and blue sprinkles of choice

Instructions

1. Line a cookie sheet or large plate with parchment paper and set it aside. In a medium bowl, add the oat flour and sift in beetroot powder (for girl) OR blue spirulina powder (for boy). Mix together until combined and all lumps are gone. Start with the least amount of beetroot/spirulina powder and add more to get the desired color in the next step.

2. To the dry ingredients, add the flax egg, almond extract, vanilla extract, and maple syrup. Mix until a dough forms. Add more beetroot/spirulina powder if necessary and continue to add and mix until your batter looks like the right pink or blue color you are looking for.

3. Take 1½ Tbs. of dough, roll it between palms, and place on parchment-lined tray. Repeat until all dough is gone (should make about 10 cake balls).

4. Melt the almond bark (or white melting chocolate) using a double boiler or microwave. If microwaving, melt in 20-second intervals, stirring in between intervals until melted. Optional: If you want your cake pops to be pink and blue on the outside, pour half the melted chocolate into another small bowl. Add the beetroot powder to one melted chocolate and the spirulina to the other until you get the desired pink and blue colors for each.

5. Dip the tip of a cake pop stick in the melted chocolate and place it in the center of a cake ball. This will act like glue to help the sticks stay in place. Repeat until all cake pops have sticks. Let the chocolate harden for about 5-10 minutes.

6. Using a spoon, dip and coat the cake pops in the melted white chocolate. Be sure to wipe off extra chocolate, you don’t want too much otherwise it will drip. Top with sprinkles and allow chocolate to set for at least 5 minutes. Make sure the gender reveal color on the inside is well hidden with chocolate. Enjoy!


Notes

  1. Once you’ve placed the cake pop sticks, don’t move them too much otherwise they will fall out because the hole will get loose. 
  2. Store in an airtight container on the counter for up to a week, in the refrigerator for up to 2 weeks or freeze for 3 months! Set on counter the thaw.
