Pumpkin: Although I tend to make a whole batch of my Secretly Healthy Fudge Brownies to eat throughout the week, this single serving brownie recipe is PERFECT if I have a little leftover pumpkin on hand. If you do happen to make a batch of my Secretly Healthy Fudge Brownies, Healthy Copycat Cosmic Brownies, or my Healthy Chocolate Chip Pumpkin Muffins, you will be left with the perfect amount of pumpkin to make a couple of these single serving healthy fudge brownies! How to Make a Brownie in a Mug

Making this healthy single serve fudge brownie is the easiest thing ever. 

  1. Mix all the ingredients in a mug.
  2. Pop it in the microwave for 3 minutes.
  3. Test your patience for 2 minutes to let it cool before digging in!

Healthy Fudge Brownie In A Mug

This Fudge Brownie In A Mug recipe is the best! So fudgy and gooey, you would never guess it’s secretly healthy. Pop the brownie mug in the microwave and you’ll have a single serve brownie in 3 minutes! Egg free, oil-free, gluten-free, paleo and vegan!

Prep Time 2 minutes
Cook Time 3 minutes
Total Time 5 minutes

Ingredients

  • ½ Chia Egg or Flax Egg (½ Tbs Ground Chia Seeds/Ground Flax Seeds + 1 Tbs water) (can sub 1 regular egg, preferably small)
  • ¼ Cup Blanched Almond Flour
  • 2-3 Tbs Coconut Sugar
  • ¼ Cup Pumpkin Puree (not pumpkin pie mix) (can sub mashed banana or sweet potato puree) 
  • 1½ Tbs Cacao Powder
  • ⅓ tsp Baking Powder

Optional:

Instructions

1. Combine all ingredients in a microwave safe mug, glass, or ramekin. Mix until well combined.

2. Place brownie mug in microwave for 3-5 minutes on high until cooked through.

3. Let cool for 2-5 minutes before enjoying!

Notes

  1. Chia or Flax Egg: You can grind up your chia or flax seeds in a coffee grinder. Let flax egg thicken for 5-10 minutes before using. Chia egg will be ready right away.
  2. What to do with the leftover pumpkin? If you used a can of pumpkin to make this single brownie and have some left over, you can use it to make my Secretly Healthy Fudge Brownies, Healthy Copycat Cosmic Brownies, or Chocolate Chip Pumpkin Muffins (they’re all dangerous… you’ve been warned).
  3. Leave out mashed pumpkin: I've had a friend try this recipe using a regular egg and leaving out the pumpkin and she said it still turned out wonderfully! Let me know if you try it this way!

    Hey there!
    I wanted to leave a comment with my “Egg Only” brownie in a mug.
    The taste was spot on but it was very dry. ☹️
    Perhaps 3 1/2 minutes in the microwave was too long or maybe it needs some sort of liquid? I’ll start with shortening the time in the future.
    PS: Thanks for all the super yummy looking recipes. Can’t wait to try more!

      Hi Denise! Awh that’s too bad it was too dry 🙁 Yes, sounds like it was cooked too long. I hope you try it again soon! It really shouldn’t come out dry because of the pumpkin in it. So just a little less microwave time and then let it cool and it should set perfectly. Thank you so much for making it and leaving this comment! I love hearing how recipes turn out!
