If you’re looking for the best healthy coconut macaroons, you’ve come to the right place. These coconut macaroons are so easy to make and they are made WITHOUT sweetened condensed milk. Naturally gluten-free & dairy-free!
Ingredients
Macaroon Ingredients
- 2 large egg whites
- 1 tsp. vanilla extract
- ⅛ tsp. pink Himalayan salt
- ⅓ cup pure maple syrup
- 2 tsp. tapioca flour
- 2 cups shredded unsweetened coconut
Optional Dark Chocolate For Dipping
- ⅓ cup dairy-free dark chocolate chips
- ⅓ tsp. refined coconut oil
Instructions
- Preheat oven to 325 F. and line a rimmed baking sheet with parchment paper.
- Add egg whites, salt, and vanilla to a medium-size bowl or stand mixer and beat on high until light, fluffy, and pale in color (about 2-3 minutes).
- Add in maple syrup, tapioca flour, and shredded coconut. Mix with a rubber spatula until all liquid is absorbed.
- Transfer to baking sheet using a small cookie scoop. Use your fingers to compact the mixture into the scoop before releasing onto the baking sheet. This ensures they stick together (makes about 14). Bake at 325 F. for 20-25 minutes or until lightly golden. Let cool completely on the baking tray.
- Optional: Melt chocolate chips and coconut oil in microwave in 25-second intervals, stirring in between each to avoid burning. You may also use a double boiler. Dunk macaroon bottoms in melted chocolate and place back on parchment-lined baking sheet. Drizzle leftover chocolate over the tops of macaroons if desired. Place in refrigerator for 20-30 minutes or the freezer for 5-10 minutes to allow chocolate to set. Enjoy! Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
Notes
- Can I use honey? Although I haven’t tested this option, I believe using honey in place of pure maple syrup should work well. Please let me know if you try this and how the macaroons turn out.
- Tapioca Flour Substitute: You should be able to substitute 1 tsp. cornstarch in place of the 2 tsp. tapioca flour. Please let me know if you try this and how the macaroons turn out.

Are Coconut Macaroons Healthy?
Most macaroon recipes use sweetened condensed milk, which is definitely not a healthy option. Sweetened condensed milk can sometimes have artificial flavors or colors and loads of refined sugar. And on top of that, it isn’t a good option if you’re dairy-free because its cow’s milk. With that in mind, this recipe is amazing because these healthy coconut macaroons are sweetened with just pure maple syrup. Pure maple syrup is a great natural sweetener with extra health benefits! Healthy Macaroons- No Sweetened Condensed Milk!
Like I mentioned above, sweetened condensed milk can often contain ingredients that aren’t necessary and don’t benefit the health of you body. That’s why with these healthy coconut macaroons, I aimed to use just pure maple syrup to sweeten them. I love using unrefined sweeteners in my recipes, like my gluten-free german chocolate cake, healthy blueberry pie, gluten-free chocolate muffins, or my no-bake peanut butter cookie dough bars.

Gluten-Free Coconut Macaroons
When searching google, I struggled to find a healthy coconut macaroon recipe that was gluten-free. I know a lot of people who follow my blog have gluten allergies, so I wanted to ensure that they could have these macaroons. Making recipes gluten-free is kind of a specialty of mine. Dairy-Free Coconut Macaroons
Since we are making these healthy coconut macaroons dairy-free we don’t use any sweetened condensed milk. Instead, we bind the macaroons together using a touch of tapioca flour and pure maple syrup. I’m telling you, they are the best texture. So light and airy, yet chewy and crunchy all at the same time. Plus that chocolate on the bottom really can’t be beaten!
