Total Time 30 minutes

Ingredients

Dry

Wet

  • ¼ cup pure maple syrup
  • ¼ cup plant-based milk or milk of choice
  • 1 tsp. vanilla extract
  • ¼ cup (4 Tbs.) cubed cold grass-fed butter or vegan butter

Maple Cream Icing

  • 3 Tbs. softened low-fat cream cheese or vegan cream cheese
  • 2 Tbs. softened grass-fed butter or vegan butter
  • 3 Tbs. pure maple syrup
  • 1 tsp. vanilla extract

Instructions

  1. In a medium bowl, add all dry ingredients and mix until combined. Then, add in all wet ingredients except butter. Mix until a dough forms.
  2. Add in cubed cold butter and use your hands or a pastry blender to incorporate. Form the dough into a ball and place in the refrigerator.
  3. Preheat oven to 400 F. and line a rimmed baking sheet with parchment paper. Once the oven is done preheating, remove scone dough from the refrigerator and place on pachament-lined baking sheet. Use your hands to press the dough down into a 1-inch thick circle.
  4. Carefully cut the circle into 8 small scones. Arrange scones on baking sheet, spacing evenly. Bake at 400 F. for 13-17 minutes (mine were perfect after 14 minutes) or until lightly golden and fragrant. Remove from oven and cool completely on baking sheet.
  5. While the scones cool, make the maple cream by combining all maple cream ingredients in a small bowl or stand mixer. Beat on high until smooth. If a little lumpy, feel free to microwave for 15 seconds (but be sure not to overheat it!) Transfer to refrigerator or serve immediately with scones. Optional: add chopped pecans or walnuts on scones. Enjoy!

Notes

  1. Storage: store in an airtight container on the counter for up to 3 days, in the refrigerator for up to 6 days or freeze for up to 3 months. If desired, reheat scones after being refrigerated.
  2. Maple Icing Substitute: Instead of making the maple cream icing, you can just top these gluten-free scones with some coconut whipped cream, or regular whipped cream, or make a clotted cream for them. All options are equally delish!

Can I Freeze These Scones?

Yes! You can flash freeze the cut scone dough and place them on a parchment-lined baking sheet. Then place them in the freezer for 10-15 minutes (this helps prevent the scones from sticking together when frozen). Then place them in a resealable plastic bag or airtight container. Bake the scones at 400 F. for 15-8 minutes until lightly golden. Please let me know in the comments if you try this and how they turn out!
