Best Chocolate Chip Zucchini Bread Recipe

So what makes me claim this vegan zucchini bread is the best? Well, first off, I have very trusted taste testers. They are honest family members who always tell me if a recipe is good or needs tweaking. It was approved by them! And my kiddos also love the vegan zucchini bread recipe! That brought so much joy to my heart and really reassured me that this recipe truly is the best.

And if you know my husband, Will, you know he is NOT a dessert person. He will pass on all desserts happily. But, when he tasted this zucchini bread he was thrilled! He loved it and finished a whole slice. That’s how you really know a recipe is good. So, I can’t wait to hear what you think about it too!

How To Make Vegan Zucchini Bread With Chocolate Chips

This choc chip zucchini bread recipe couldn’t be easier to make. You only need one bowl and about 40 minutes of time. I am a HUGE fan of one-bowl recipes. If you’ve made my gluten-free pumpkin bread, chocolate coconut banana bread, or my secretly healthy fudge brownies, then you know what I’m talking about! No need for extra bowls for wet and dry ingredients. That’s way too much work and dishes  in my opinion😆

Here are the steps:

  1. Preheat your oven
  2. Mix wet ingredients together
  3. Add in flours and spices
  4. Fold in baking powder, baking soda, shredded zucchini, and chocolate chips.
  5. Transfer to loaf pan
  6. Bake
  7. Enjoy!

It’s that simple. The full instructions are in the recipe above 🙂

Reasons To Love This Vegan Zucchini Bread Recipe?

  1. Ridiculously easy to make! Just pop everything into one bowl, mix, then bake and enjoy.
  2. Perfect amount of fluff and moisture. This vegan zucchini bread is fluffy without being too dry or dense. It’s perfectly moist without using a crazy amount of processed oil (we use coconut oil or avocado oil and unsweetened applesauce).
  3. Flavor explosion. The cinnamon chocolate chip flavor of this bread is truly the best flavor combo.
  4. Super healthy and filling. Since this gluten-free zucchini bread has healthy ingredients, it will keep you fuller longer and won’t spike your blood sugar like other zucchini bread will. Perfect for snacking on, eating for breakfast, or even an after-dinner treat.
  5. High in fiber. Ya gotta love oats for being such an amazing source of complex carbs and fiber. The perfect way to kick start any day! We use oat flour in this recipe to make the zucchini bread gluten-free. I make my own oat flour in 3 simple steps
  6. There are limitless add-ins for this vegan zucchini bread. Before baking, to the batter, you can add shredded coconut, blueberries, raspberries, or whatever your heart desires!
  7. Toddler and kid-friendly! Kids absolutely love this zucchini bread, especially if you make them into mini loaves or zucchini muffins. You can also use my favorite mini-muffin tin and kids really will go crazy over them! They are the perfect size for kids and adults alike.

Chocolate Chip Zucchini Bread Recipe

Who doesn’t love chocolate?! I know I do! And so do my kiddos. I’m telling you, dark chocolate takes this vegan zucchini bread to a whole new level. I use dark chocolate in all of my recipes and could not recommend it more. Here are some of my favorite healthier dark chocolate brands: Enjoy Life, Pascha, Lily’s, and Hu Kitchen (code “CLAIRE” for 15% off).

Zucchini Bread Gluten-Free Vegan

Making desserts secretly gluten-free is something I’ve been doing for years now. If you’ve tried my gluten-free gingerbread cookies, Nutella banana bread, or my gluten-free pumpkin bread, you’ll know what I’m talking about. So, when I say this vegetarian zucchini bread is secretly gluten-free, I mean it! No one will be able to tell it’s gluten-free and sweetened with all-natural sweeteners.

We use a combination of oat flour and gluten-free all-purpose flour to give this vegan zucchini bread the perfect amount of fluffiness and tenderness. I love adding oat flour in combination with gluten-free flour because I find it really gives it moisture. Gluten-free flour on its own can leave recipes very dry and yucky, especially after a day or so. With this zucchini bread though, it is so moist and stays relatively moist thanks to the oat flour and other wet ingredients! Win, win!

My favorite gluten-free all-purpose flour to use for this vegan zucchini bread recipe is King Arthur’s Measure For Measure Gluten-free Flour. It contains xanthan gum which is key! You need to find gluten-free flour with xanthan gum, otherwise, this healthy zucchini bread will fall apart. You can also add xanthan gum if you have it on hand and your gluten-free flour doesn’t contain it.

Vegan Gluten-Free Zucchini Bread

I love that this vegan zucchini bread is egg-free. A lot of my vegan recipes use flax eggs or chia eggs, which I really love working with! This vegan zucchini bread is no different. We use 1 flax egg to help this zucchini bread hold together. I know of so many people who have egg allergies, so this vegan zucchini bread truly is the best way to feed and nourish anyone with a yummy treat who otherwise couldn’t enjoy it. You can of course substitute in a real egg if you are not vegan or don’t have any egg intolerances.

Commonly Asked Zucchini Bread Questions

Can You Taste Zucchini In Zucchini Bread? You cannot taste the zucchini in this zucchini bread recipe. I have tried other recipes in which I could taste the zucchini. The reason for that would be the recipe calls for too much zucchini. From my perspective, one cup of shredded zucchini is the perfect amount because it adds moisture but it doesn’t have a zucchini flavor. The cinnamon, allspice, and chocolate chips really add the best flavor to this gluten-free zucchini bread.

Can I Make Zucchini Bread Muffins? Absolutely! Line muffin tins with coconut oil or use paper muffin liners or silicone muffin liners. Once you’ve made the zucchini bread batter, fill each muffin cup ¾ full with batter and bake at 350 F. for about 25-35 minutes or until a toothpick comes out with a few moist crumbs. You can also use my favorite mini-muffin tin and kids really will go crazy over them! For mini-muffins, bake at 350 F. for 20-30 minutes.

Do you peel zucchini before shredding for bread? You do not need to peel the zucchini before shredding it for bread. The zucchini skin does not have a lot of flavor, but it is loaded with nutrients! Don’t peel it off. It’s more work and you’ll miss out on some of the health benefits. Here are some of the health benefits of zucchini skin

Do you remove the seeds from the zucchini before making bread? No need to remove the seeds from the zucchini before making bread. The seeds aren’t big or crunchy. You cannot even tell they are there once you shred the zucchini.

Do you squeeze out the liquid from zucchini for bread? I don’t recommend completely squeezing out all the liquid from the zucchini for bread. This is because some of the liquid is good to have in the bread to make it moist. In my vegan zucchini recipe, I tell you to lightly dry the zucchini off with a paper towel. This removes some of the extra moisture, but I believe leaves the perfect amount of liquid to give the bread a tenderness without making it soggy. Win, win!

Can I Make This Into Chocolate Chip Zucchini Muffins?

Can you add chocolate chips to zucchini bread? You know it! This is what I prefer to do with this vegan zucchini bread. You already have a healthier zucchini bread, so why not spice it up a bit and add in some healthy vegan chocolate to the mix? It really gives this zucchini bread the best flavor combination. I don’t think it’s necessary to coat the chocolate chips in any flour either. I find that my chocolate chips never sink to the bottom. So no extra steps are needed there either 🙂

Can I make this into mini zucchini bread with chocolate chips? This is a definite yes! Making this vegan zucchini bread into mini loaves is such a great idea. If your garden is bumpin’ with zucchini you can make a double or triple batch of my vegan zucchini bread recipe and then make mini loaves to gift to people. This is such a cute idea! I might even do it this summer for fun 🙂 Here are some super cute mini loaf pans you can buy.

Vegan Zucchini Bread With Chocolate Chips

Yes, you can omit the chocolate chips from this recipe, however, why would you want to do that?! Just kidding. You seriously can omit them. You can add a different ingredient if you’d like. I have options listed below for some ideas. I just love a good zucchini bread chocolate chip recipe.

Add-Ins For This Gluten-Free Vegan Zucchini Bread

I think this zucchini bread with chocolate chips and walnuts would be really yummy! Walnuts would give it an extra crunch plus some healthy fats too! Another great addition would be blueberries or raspberries because berries and chocolate go together like paper and glue in my opinion. I’ve made chocolate chip raspberry banana bread and fudgy raspberry brownies to prove it!
