Fluffy Vegan Zucchini Bread (Easy + Gluten-Free!)

This is the best fluffy vegan zucchini bread recipe! It’s gluten-free and so easy to make. The texture is fluffy, moist, and tender. It’s sweetened with all-natural sweeteners like coconut sugar and monk fruit for a low-sugar option. This is the only chocolate chip zucchini bread recipe you’ll ever need, vegan or not!
Ingredients
Wet
- 1 flax egg (1 Tbs. ground flax + 2 Tbs. water. Sit and let thicken 3-5 minutes) can sub 1 regular egg
- ½ cup unsweetened applesauce
- 2 Tbs. avocado oil or melted refined coconut oil
- ¼ cup granulated monk fruit sweetener (packed light brown sugar or coconut sugar will also work)
- ⅓ cup pure maple syrup or honey
- 1 tsp. vanilla extract or vanilla bean paste
Dry
- 1 cup oat flour (I make my own in 3 steps)
- 1 cup gluten-free flour (be sure it contains xanthan gum. I use King Arthur Measure For Measure)
- 1 tsp. cinnamon
- ⅛ tsp. allspice (or nutmeg)
- ⅛ tsp. pink Himalayan salt
- 3 tsp. baking powder
- 1 tsp. baking soda
- 1 cup slightly heaping packed grated zucchini (lightly dried with a paper towel)
- ½ cup dairy-free dark chocolate chips (I love this brand) + more for topping
Instructions
- Preheat oven the 350 F. and line a loaf pan with parchment paper.
- In a medium bowl, add all wet ingredients and mix until smooth.
- Next, add in oat flour, gluten-free flour, cinnamon, allspice, and pink salt. Mix until combined. Lastly, add in baking powder, baking soda, grated zucchini, and dark chocolate chips. Gently fold together until incorporated.
- Transfer batter to loaf pan. If desired, add extra chocolate chips on top, and bake at 350 F. for 35-40 minutes or until a toothpick comes out with a few moist crumbs (mine was perfect after 35 minutes). Let cool completely, slice, and enjoy! Store in an airtight container on the counter for up to 3 days, in the refrigerator for up to 5 days, or freeze for 3 months.

This choc chip zucchini bread recipe couldn’t be easier to make. You only need one bowl and about 40 minutes of time. I am a HUGE fan of one-bowl recipes. If you’ve made my gluten-free pumpkin bread, chocolate coconut banana bread, or my secretly healthy fudge brownies, then you know what I’m talking about! No need for extra bowls for wet and dry ingredients. That’s way too much work and dishes in my opinion😆
Here are the steps:
- Preheat your oven
- Mix wet ingredients together
- Add in flours and spices
- Fold in baking powder, baking soda, shredded zucchini, and chocolate chips.

Making desserts secretly gluten-free is something I’ve been doing for years now. If you’ve tried my gluten-free gingerbread cookies, Nutella banana bread, or my gluten-free pumpkin bread, you’ll know what I’m talking about. So, when I say this vegetarian zucchini bread is secretly gluten-free, I mean it! No one will be able to tell it’s gluten-free and sweetened with all-natural sweeteners.
We use a combination of oat flour and gluten-free all-purpose flour to give this vegan zucchini bread the perfect amount of fluffiness and tenderness. I love adding oat flour in combination with gluten-free flour because I find it really gives it moisture. Gluten-free flour on its own can leave recipes very dry and yucky, especially after a day or so. With this zucchini bread though, it is so moist and stays relatively moist thanks to the oat flour and other wet ingredients! Win, win!
My favorite gluten-free all-purpose flour to use for this vegan zucchini bread recipe is King Arthur’s Measure For Measure Gluten-free Flour. It contains xanthan gum which is key! You need to find gluten-free flour with xanthan gum, otherwise, this healthy zucchini bread will fall apart. You can also add xanthan gum if you have it on hand and your gluten-free flour doesn’t contain it.

Vegan Gluten-Free Zucchini Bread
I love that this vegan zucchini bread is egg-free. A lot of my vegan recipes use flax eggs or chia eggs, which I really love working with! This vegan zucchini bread is no different. We use 1 flax egg to help this zucchini bread hold together. I know of so many people who have egg allergies, so this vegan zucchini bread truly is the best way to feed and nourish anyone with a yummy treat who otherwise couldn’t enjoy it. You can of course substitute in a real egg if you are not vegan or don’t have any egg intolerances.
Commonly Asked Zucchini Bread Questions
Can You Taste Zucchini In Zucchini Bread? You cannot taste the zucchini in this zucchini bread recipe. I have tried other recipes in which I could taste the zucchini. The reason for that would be the recipe calls for too much zucchini. From my perspective, one cup of shredded zucchini is the perfect amount because it adds moisture but it doesn’t have a zucchini flavor. The cinnamon, allspice, and chocolate chips really add the best flavor to this gluten-free zucchini bread.
Can I Make Zucchini Bread Muffins? Absolutely! Line muffin tins with coconut oil or use paper muffin liners or silicone muffin liners. Once you’ve made the zucchini bread batter, fill each muffin cup ¾ full with batter and bake at 350 F. for about 25-35 minutes or until a toothpick comes out with a few moist crumbs. You can also use my favorite mini-muffin tin and kids really will go crazy over them! For mini-muffins, bake at 350 F. for 20-30 minutes.
Do you peel zucchini before shredding for bread? You do not need to peel the zucchini before shredding it for bread. The zucchini skin does not have a lot of flavor, but it is loaded with nutrients! Don’t peel it off. It’s more work and you’ll miss out on some of the health benefits. Here are some of the health benefits of zucchini skin.
Do you remove the seeds from the zucchini before making bread? No need to remove the seeds from the zucchini before making bread. The seeds aren’t big or crunchy. You cannot even tell they are there once you shred the zucchini.
Do you squeeze out the liquid from zucchini for bread? I don’t recommend completely squeezing out all the liquid from the zucchini for bread. This is because some of the liquid is good to have in the bread to make it moist. In my vegan zucchini recipe, I tell you to lightly dry the zucchini off with a paper towel. This removes some of the extra moisture, but I believe leaves the perfect amount of liquid to give the bread a tenderness without making it soggy. Win, win!

You already have a healthier zucchini bread, so why not spice it up a bit and add in some healthy vegan chocolate to the mix? It really gives this zucchini bread the best flavor combination. I don’t think it’s necessary to coat the chocolate chips in any flour either. I find that my chocolate chips never sink to the bottom. So no extra steps are needed there either 🙂
Can I make this into mini zucchini bread with chocolate chips? This is a definite yes! Making this vegan zucchini bread into mini loaves is such a great idea. Add-Ins For This Gluten-Free Vegan Zucchini Bread
I think this zucchini bread with chocolate chips and walnuts would be really yummy! Walnuts would give it an extra crunch plus some healthy fats too! Another great addition would be blueberries or raspberries because berries and chocolate go together like paper and glue in my opinion. I’ve made chocolate chip raspberry banana bread and fudgy raspberry brownies to prove it!
