Easy Homemade Samoas Recipe (Healthy + Gluten-Free)

If you’re looking for a classic homemade Samoas recipe, this one is it! These copycat Girl Scout cookies are chewy and taste like the real thing. They’re easy to make and use just 7 simple ingredients. Gluten-free, dairy-free, and vegan!

Total Time 40 minutes

Ingredients

  • 1 cup packed pitted Medjool dates (about 10 large dates) (soak in boiling water for 5-10 minutes until softened then drain)
  • 1½ cups lightly packed cashew flour or blanched almond flour
  • 1 tsp. vanilla extract or vanilla bean paste
  • 1½ tsp. baking powder
  • 1½ cups shredded unsweetened coconut + optional 1½ Tbs. for topping

Chocolate Topping

Instructions

  1. Preheat oven to 350 F. and line a rimmed baking sheet with parchment paper. 
  2. In a food processor or high-speed blender, add the softened dates, cashew flour, and vanilla extract. Blend until smooth, scraping down the sides when needed.
  3. Add in shredded coconut and baking powder. Stir by hand until combined.
  4. Transfer to baking sheet using a small cookie scoop (makes about 18 cookies). Flatten each cookie and then poke a hole through the middle using your finger. Swirl your finger around, making the hole in the center about ½ inch in diameter.
  5. Optional, sprinkle extra shredded coconut on each cookie. Bake at 350 F. for 15-20 minutes until lightly golden. Let cookies cool completely.
  6. Once cookies have cooled, melt chocolate chips and coconut oil in microwave in 25-second intervals, stirring in between each to avoid burning. You may also use a double boiler. Use a fork to dip each cookie bottom in the melted chocolate. Let any excess chocolate drip off before placing back onto parchment-lined cookie sheet. Drizzle remaining melted chocolate over the top of cookies.
  7. Chill Samoas in freezer for 10-15 minutes to allow chocolate to set. Enjoy! Store in an airtight container on the counter for up to 3 days, in the refrigerator for up to 7 days, or freeze for 3 months.

Girl Scout cookies are so good, but they are getting a little pricy these days. That’s why I made it my mission to make Girl Scout cookie dupes in my own kitchen and share the recipes with you! And this homemade Samoas recipe is no different. Not only do I love saving money and making lots more cookies, but I also love that my recipes are naturally sweetened, and made without using processed flour or sugar. The other benefit to this homemade Samoas recipe is that it is gluten-free, vegan, and dairy-free! Just 7 simple ingredients.

Homemade Samoas Recipe

The normal Girl Scout Samoas cookies are not gluten-free or vegan. They are also loaded with processed sugar and flour. This homemade Samoas recipe is super easy to make. You only need 7 ingredients! It’s truly the best. I also love the size of these cookies because they’re great to serve at social gatherings, birthday parties, and more. No one will know they are actually healthy and good for you!

Easy Samoas Recipe

Now, this isn’t the Samoas recipe 3 ingredients, unfortunately. But, I will say, those 3 ingredient ones really don’t taste like the real thing. When I make my copycat recipes, I want them to be as close to the real texture and flavor as possible. That’s why these aren’t just samoa cookie recipe 4 ingredients either.

My homemade Samoas recipe though is still super easy to make and uses very limited ingredients! Plus, they will actually taste like the real thing. As I said, this homemade Samoas recipe could not be any easier to make. You just need 7 simple Samoa cookies ingredients for this recipe. You mix all the cookie ingredients in the bowl and then shape the dough into spheres. Flatten the spheres between your palms and then place on a parchment-lined baking tray. Use your finger to put a hole in the center of each cookie for that iconic Samoas shape. Bake the cookies until golden and fragrant. While cookies are cooling, melt the chocolate and coconut oil. Then dunk each cookie bottom in the beautiful dark chocolate and place them right back on the parchment-lined baking sheet. Once all the cookie bottoms have chocolate on them, drizzle dark chocolate over the tops of the cookies. I’m telling you, dark chocolate takes these cookies to a whole new level. I use dark chocolate in all of my recipes and could not recommend it more.

I will say, the calories in this homemade Samoas recipe has “BETTER for you” calories. Instead of artificial or processed ingredients from the girl scout cookies, you get all real food ingredients that will make you feel good after eating them. No sugar crashes or anything. Samoas Girl Scout Cookie Name Change

Did the Girl Scouts change the name of Samoas to Caramel Delights? This has been confusing me for quite some time now, especially since researching more about homemade Samoas recipes. There seem to be two different names for a lot of the Girl Scout cookies. Well, I stumbled, and by stumbled I mean I purposefully googled, this burning question and did find somewhat of an answer.

According to the Girl Scout Cookie Website

“Why do some cookies look the same but have different names? Each Girl Scout council contracts with one of two licensed bakers, whose recipes and ingredients may differ slightly: ABC Bakers and Little Brownie Bakers. That’s why some of our cookies look the same but have two different names. Whether the package says Peanut Butter Patties® or Tagalongs®, or Samoas® or Caramel deLites®, the cookies are similarly delicious. Contact your local Girl Scout council to find out which Girl Scout Cookies are available in your area.”

It seems that the cookie names are dependent on where you live and where the Girl Scouts are selling their cookies. And this is because there are two different companies that bake their cookies! So the cookies in it of themselves might actually differ slightly in taste, texture, and ingredients. I know, mind-blowing. Very interesting stuff indeed 😂 No matter what you call them, this homemade Samoas recipe needs to be made in your kitchen ASAP.

What you need to make these copycat Girl Scout Cookies Samoas are:

Medjool dates

cashew flour or blanched almond flour

vanilla extract

baking powder

shredded unsweetened coconut

dairy-free dark chocolate chips

refined coconut oil

Can I Make This Homemade Samoas Recipe Into Samoa Cookie Bars?

I haven’t attempted to make this homemade Samoas recipe into bars yet, but I think it would be amazing and super easy. Instead of shaping the cookie dough into cookies, just line an 8×8 baking dish with parchment paper and spread all the cookie dough on the bottom. Then sprinkle with some extra shredded coconut and bake it. I would bake it at 350 F. for about 25-30 minutes until golden and fragrant. Just keep an eye on it since it will have a different baking time than the cookies. After the cookie bars are baked, top with melted dark chocolate and let harden in the refrigerator or freezer for 20-30 minutes. Cut, serve, and enjoy!
