Easy Homemade Chocolate Pudding Recipe

Who doesn’t love an easy recipe? I know I do! That might be obvious though, as easy recipes are all I create *cough cough* my Healthy Nutella Banana Bread, Chocolate Chip Coconut Baked Oatmeal, Cookies & Cream Protein Shake, 4-Ingredient Gluten-Free Lava Cakes and that’s just the beginning! But for real, this healthy chocolate pudding might be up there for one of the easiest recipes I’ve ever created. You’re bound to love it and no one will know it’s made with healthier, more wholesome ingredients!

How To Make This Healthier Chocolate Pudding

Like I said before, this is probably one of my easiest recipes on the blog. You simply add all ingredients into a pot over the stove and heat until thickened. Then chill it in the refrigerator and serve! The ingredients are pretty simple. I bet you actually have all of them in your kitchen as we speak.

Quick Chocolate Pudding 

This pudding is super quick to whip together! And yes, we literally do whip it to make it nice and smooth and fluffy. The only difficult part of this recipe is WAITING for it to chill in the fridge for at least an hour or so… it really kills me. I love the fact that you don’t have to use the oven or bake anything though. It makes this pudding recipe even easier. Even if you’ve never made something like this, trust me, you can do it! This was my first time trying to make homemade pudding too (even with kids running around my house)! So, if I can do it, surely you can too!

How Do I Make This Pudding Dairy-Free?

If you have a dairy allergy or intolerance you can EASILY make this chocolate pudding dairy-free. Simply omit the kefir or use vegan kefir (yes that’s a thing). Also, be sure to use non-dairy milk such as unsweetened almond milk, oat milk, or whatever “milk” you prefer! Let me know what non-dairy milk you use for this recipe down below! Why Kefir?

We add the kefir to give this pudding an extra probiotic punch! If you’ve never tried kefir before, get ready to have your mind blown! We use the Lifeway Kefir brand and love it. It’s so delicious and such an easy snack. My toddler happens to LOVE it and I feel so confident giving it to him as a post-nap snack to sip on. Read about why kefir is good for you here. If you don’t have any on hand, feel free to omit it and do not add the extra 2 Tbs of cornstarch the recipe calls for.

Easy Healthy Chocolate Pudding

Ingredients

  • â…“ Cup + 2 Tbs Cacao Powder
  • ÂĽ Cup + 2 Tbs Cornstarch (do not sub tapioca flour as it will not thicken the pudding)
  • â…› tsp Pink Himalayan Salt
  • 2½ Cups Unsweetened Almond Milk or Milk of Choice
  • ½ Cup Pure Maple Syrup or Honey (you can add 1-3 Tbs more to taste, if desired)
  • ÂĽ Cup Dark Chocolate Chips (or dairy-free chocolate of choice)
  • 1 tsp Vanilla Extract or Vanilla Bean Paste
  • ½ Cup Chocolate Kefir (can omit, see note 1)

Instructions

1. In a medium saucepan, sift in cacao powder and cornstarch. Add in pink salt. Stir until combined, then pour in almond milk and maple syrup. Turn heat to medium and whisk mixture constantly to remove all clumps. 

2. Bring mixture to a simmer and stir constantly 1-2 minutes until thickened. Make sure you scrape the bottom inside edges of the pot to get all the cornstarch and cacao powder mixed in. If you have an electric hand frother this is a great way to mix everything well! Once thick, remove from heat (it will continue to thicken when cooled completely). 

3. Stir in vanilla and dark chocolate chips. Transfer pudding to a glass container or jar and allow to cool at least 20 minutes or until room temperature. Then whisk in chocolate kefir with an electric hand mixer. Place in the refrigerator to set and cool at least 1-2 hours or until chilled through. 

4. Remove from refrigerator, whisk again until smooth. Pour pudding through a mesh strainer to remove lumps. There still may be tiny lumps, but they're barely noticeable when eating.

5. Serve with whipped cream, extra chocolate shavings, and enjoy! Store in an airtight container in the refrigerator for up to 6 days.

Notes

  1. Kefir: kefir gives this pudding some awesome added probiotics, but if you don’t have any on hand, feel free to omit it and do not add the extra 2 Tbs of cornstarch the recipe calls for. OR substitute it for a dairy-free kefir!
  2. We add the kefir after pudding has cooled to ensure all probiotics are still intact and won’t be heated and killed.
