These easy gluten-free pumpkin bars are healthy and moist. They have the perfect tender texture and have the most delicious maple cream cheese frosting. Naturally sweetened, vegan-friendly, made with almond flour and gluten-free flour. No one will know they’re secretly healthy. The perfect cozy healthy dessert for hosting any fall gathering or holiday.

Gluten-Free Pumpkin Bars With Cream Cheese Frosting

What I absolutely adore about these gluten-free pumpkin bars is that the maple cream cheese frosting is optional, but highly recommended! These pumpkin bars are so delicious on their own. Perfectly moist and tender. However, adding that maple cream cheese frosting takes them to the next level. What I love about the cream cheese frosting too is that it’s refined sugar-free. Yup, that’s right. No powdered sugar at all! We use just pure maple syrup to sweeten it. How awesome is that?!

Easy Gluten-Free Pumpkin Bars Recipe

If you’ve been here a while you know that I am ALL ABOUT the easy recipes. I am not a fancy baker in the least… I’ve got kids, I don’t have the time 😉 This is good news for you though because that means you can make my recipes without having to be an expert baker. So what is a gluten-free pumpkin bar made of?

Ingredients For Gluten-Free Pumpkin Bars With Cream Cheese Frosting

The ingredients for these gluten-free pumpkin bars are SUPER SIMPLE! I’m betting you have most of them in your kitchen as we speak.

  • Eggs
  • Pumpkin Puree (not pumpkin pie mix)
  • Vanilla Extract
  • Grass-fed butter (or vegan butter)
  • Pure Maple Syrup (honey should also work although I haven’t tested this)
  • Coconut Sugar
  • Cinnamon & Pumpkin Pie Spice (here’s a recipe for homemade)
  • All-Purpose Gluten-Free Flour Blend (must contain xanthan gum. I love the King Arthur brand)
  • Almond Flour (lightly packed)
  • Pink Himalayan Salt & Baking Powder

Optional: Maple Cream Cheese Frosting

  • Softened Low-Fat Cream Cheese (can sub vegan cream cheese)
  • Softened Grass-Fed Butter (or vegan butter)
  • Pure Maple Syrup (+ more if you like sweeter frosting)
  • Vanilla Extract


Full measurements and instructions are in the printable recipe below 🙂 The Pumpkin Bars shown in the first photos with whiter frosting used eggs and the second photos used a flax egg. In the second photo my cream cheese frosting I watered down to get a runner consistency. Frosting may look different depending on a few factors. I list these in the printable recipe card. Adding more maple syrup will affect the texture a bit.

Gluten-Free Pumpkin Bars Almond Flour

What makes these pumpkin bars gluten-free? Well, we actually use 1:1 gluten-free flour & blanched almond flour in this recipe. I usually only use a combination of flour when it comes to gluten-free baking. Doing this balances the flavors and textures perfectly. Check out my Healthy Banana Coffee Cake and almost all of my Banana Bread recipes to see those gluten-free flour combos too. Gluten-free all-purpose flour and almond flour is my new favorite gluten-free flour combination though! It makes the perfect amount of fluff and moisture. 

You literally can’t tell it’s made with these flours. How To Make The Best Gluten-Free Pumpkin Bars

Are you ready for this? Here’s how to make this healthy pumpkin bar recipe. Add all wet ingredients to a medium bowl. Mix. Add all dry ingredients to the bowl and mix. Bake. Allow to cool. Make the optional cream cheese frosting. Frost and enjoy! I had trouble stopping myself from eating about 5 of these when I was finished making them. They are dangerously addicting! You’ve been warned 😂

Gluten-Free Pumpkin Bars Recipe

Just like my dairy-free vegan mousse cake, I’m not kidding when I say this gluten-free pumpkin bar recipe is extremely healthy, loaded with vitamin A, and also extremely delicious. These pumpkin bars were devoured in about 3 days when I had my family members try them. Many of them went back for seconds and they couldn’t believe it was secretly healthy. My friend told me it was her “dream dessert.” You just really can’t go wrong with that testimony. I can’t wait to hear what you think! I love making these pumpkin bars gluten-free for all the guests we have coming over during fall football games or Thanksgiving time. It is the perfect dessert for hosting guests in the cozy months of September, October, and November. This is the best gluten-free pumpkin dessert in my opinion. I grew up eating the unhealthy version with gallons of vegetable oil in them. And let me tell you, these taste even better than those and you can feel good about eating them because they are made with wholesome ingredients that won’t make you feel awful.

What Are These Gluten-Free Pumpkin Bars Sweetened With?

Just like all of my recipes, these healthy gluten-free pumpkin bars are completely refined sugar-free, and made from natural sweeteners. This particular gluten-free pumpkin recipe uses just pure maple syrup and coconut sugar. The combination of these healthier sweeteners gives the bars the perfect moist and tender texture. Can I Make These Gluten-Free Pumpkin Bars Vegan?

These healthy pumpkin bars work perfectly with a flax egg. Just use 1 flax egg in place of the two regular eggs. 1 Tbs. ground flax seed + 2 Tbs. water. Mix and let sit 3-5 minutes until thickened. Let me know if you try this and how you like it🙂Using flax eggs will give the pumpkin bars more of a denser moister texture. The eggs really add more fluffiness. Either way, this recipe is divine!

Cook Time 25 minutes
Total Time 40 minutes

Ingredients

Wet

  • 2 eggs (or 1 flax egg: 1 Tbs. ground flax + 2 Tbs. water. See note 1)
  • 1 cup pumpkin purée
  • ½ cup pure maple syrup
  • ½ cup + 2 Tbs. coconut sugar
  • 3 Tbs. melted grass-fed butter (or melted refined coconut oil or vegan butter)
  • 1 tsp. vanilla extract or vanilla bean paste

Dry

Optional: Maple Cream Cheese Frosting

  • ½ block (4 oz) softened low-fat cream cheese (can sub vegan cream cheese)
  • 2 Tbs. softened grass-fed butter (or vegan butter)
  • 2 Tbs. pure maple syrup (+ more if you like sweeter frosting)
  • 1 tsp. vanilla extract or vanilla bean paste

Instructions

  1. Preheat oven to 350 F. and line an 8x8 baking dish with parchment paper. 
  2. Add all wet ingredients to a medium bowl or stand mixer. Mix with an electric mixer until smooth (about 1 minute). Add all dry ingredients except baking powder and mix until combined. Last, fold in baking powder until just combined. 
  3. Bake at 350 F. for 23-25 minutes or until a toothpick comes out with a few moist crumbs. Let cool completely.
  4. Optional: While the gluten-free pumpkin bars are cooling, make maple cream cheese frosting by combining all ingredients in a medium bowl and beating on high with an electric mixer (make sure your cream cheese and butter are softened). If the glaze is looking clumpy, place in microwave and defrost for 15 seconds and then continue mixing until smooth. Consistency may differ depending on the softness of your butter and cream cheese. You will either get a fluffy thick cream cheese frosting or a runnier one. This also depends on how much maple syrup you add as well. If you’d like a thicker frosting, place the icing in the fridge to thicken up for 20-30 minutes. 
  5. Once the gluten-free pumpkin bars are cooled, frost with maple cream cheese frosting and sprinkle with cinnamon if desired. Enjoy! Store in an airtight container in the refrigerator for up to 5 days (if left unfrosted you can store the bars in an airtight container at room temperature for up to 3 days).

Notes

1. Flax Egg Substitution: the flax egg option is great! The texture is a little less fluffy which some people actually might prefer. Make 1 flax egg in place of the 2 eggs. Combine 1 Tbs. ground flax seeds with 2 Tbs. water. Sit and let thicken for 3-5 minutes.
