These Gluten-Free 7 Layer Bars are one of the easiest recipes I’ve ever made! They are naturally sweetened with just a touch of pure maple syrup or honey and are easily gluten-free by using gluten-free graham crackers. Vegan-friendly! The combination of dark chocolate, coconut, chopped walnuts, and pecans on a graham cracker crust is heavenly.

Gluten-Free 7 Layer Bars Recipe

If you’re looking for a dessert that is as easy to make as it is delicious, these gluten-free 7 layer bars are an absolute must-try! Packed with layers of sweet, rich ingredients and a crunchy graham cracker base, these bars have everything you need for a perfect treat. If you’re familiar with any of my recipes, you know that I love using maple syrup, honey or coconut sugar as my main sweeteners instead of processed white sugar. To make your own, simply combine a can of full-fat coconut milk with pure maple syrup or honey in a saucepan. Simmer the mixture until it reduces by half (for 20 minutes), creating a thickened, condensed consistency that will soak into the layers for a gooey, melt-in-your-mouth experience. While the coconut milk is reducing, you can start working on the crust and other layers, ensuring everything is ready when the coconut milk is done. If you choose this option I would recommend lightly toasting your nuts in a pan over medium heat or the oven for about 10 minutes. Not required, but it would help give an extra depth of flavor! Toasted nuts just taste so much better.

  • 1. Make the Condensed Coconut Milk: (Alternate option is to purchase sweetened condensed coconut milk and skip this step): Add the canned coconut milk and pure maple syrup to a medium saucepan, mix, and place on the stove over medium heat. Once the milk starts to boil, reduce heat to low, cover, and simmer for exactly 20 minutes, stirring occasionally (be cautious as the mixture may bubble and pop out of the pan). 
  • 2. While the coconut milk mixture is simmering, preheat your oven to 350°F and line an 8×8 inch baking dish with parchment paper. 
  • 3. Make the Crust: In a medium microwave-safe bowl, add your butter, cover, and melt in 20-second intervals, stirring between each to ensure it doesn’t burn. Add in graham cracker crumbs and mix until combined.
  • 4. Transfer crust mixture to the 8×8 inch baking dish and press down firmly into an even layer.
  • 5. By now your coconut milk will be done simmering. It should be reduced by half but still thin after the 20 minutes. Remove from heat and mix in vanilla extract. Set aside to cool for 10 minutes (try to not let it cool too long or it will become too thick & cloudy. This will still work for the recipe but the coconut milk might not be able to sink down deep into the bars, which is what you want).
  • 6. Layer the Bars: While the condensed coconut milk is cooling, start assembling the bars by layering the chocolate chips, shredded coconut, and chopped nuts on your crust in an even layer. 
  • 7. Pour over the warm coconut milk mixture to cover everything as best as you can (be sure to get it to the edges). Wiggle the pan gently to ensure the condensed coconut milk has gone between the crevices of the toppings.
  • 8. Bake at 350°F for 30-35 minutes or until the edges are slightly golden (mine was done after 30 minutes). Allow bars to cool completely otherwise they will fall apart. This can take up to 2 hours at room temperature. You can place them in the refrigerator or freezer for 1 hour +  to speed up this process. Enjoy! Store leftovers in an airtight container for up to a week or freeze for up to 3 months.

  1. You can use store-bought sweetened condensed coconut milk and skip the step of making it yourself.
  2. Chocolate Options: You can use refined sugar-free chocolate chips such as Lilly’s or Hu Kitchen to make these bars completely naturally sweetened! Enjoy Life is also a great option for allergy-friendly chocolate.
  3. Graham Cracker Options: Simple Mills Sweet Thins, Gluten-Free Graham crackers, or regular homemade graham crackers or store-bought if you don't need to be gluten-free. I've also used Belvita Golden Oat biscuits and those were amazing (not gluten-free). You can make them crumbs by placing the crackers in a large gallon-size bag and crushing them with a rolling pin OR processing them in a high-speed blender or food processor.
