  • 2 ripe speckled bananas about 1 cup mashed
  • 1 egg or flax egg, see notes
  • 4 Tbs. avocado oil (or grass-fed butter, melted)
  • 2 tsp. vanilla extract
  • ¼ cup + 2 Tbs. pure maple syrup or honey

Instructions

  • Preheat oven to 350°F. Line a 9 inch loaf pan with parchment paper or lightly grease.
  • (For muffins, line a 12-cup muffin tin. I love these cute paper liners.)
  • Wet ingredients: In a large bowl, mash the ripe bananas until smooth. Add the egg (or flax egg), avocado oil or melted butter, vanilla extract, and honey or maple syrup. Whisk until fully combined.
  • Dry ingredients: Sprinkle the einkorn flour, almond flour, cinnamon, salt, baking powder, and baking soda directly over the wet ingredients. Gently fold until just combined. Gently fold in any mix-ins of choice (chocolate chips, walnuts, etc). Do not overmix—einkorn flour is delicate. Optional: fold in ⅓ cup dark chocolate chips, walnuts, pecans, or add-in of choice.
  • Let the batter rest for 10 minutes to allow the einkorn flour to hydrate and improve texture.
  • Pour the batter into the prepared loaf pan and smooth the top. (For muffins, divide batter evenly between 12 muffin cups.)
  • Bake at 350°F for 38–43 minutes, or until a toothpick inserted into the center comes out with moist crumbs and the internal temperature reaches 200–205°F. For muffins: bake for 20-25 minutes until toothpick comes out with a few moist crumbs.
  • Remove from the oven and cool in the pan for 15 minutes, then transfer to a wire rack and cool for 1 hour before slicing.

Nut-free option: replace the ½ cup almond flour with ½ cup oat flour or ½ cup more einkorn flour. The almond flour does make this banana bread extra moist but oat or einkorn flour would make it extra fluffy!
Flax egg: I haven’t tested a flax egg for this recipe, but it should work well. Just use 1 Tbs. ground flax + 2 Tbs. water. Sit and let thicken for 5 minutes and use in the recipe as the egg.
More Notes
Batter will be thick — this is normal for einkorn.
Letting the loaf cool fully is essential for proper texture.
