Easy Vegan Pumpkin Chocolate Chip Cookies
Easy to Make: You just need one mixing bowl to make these healthy pumpkin cookies! Just mix all your ingredients together and scoop them into cookies on your cookie sheet, flatten them down and bake for around 15 minutes! I love using my medium cookie scoop to get a consistent shape and size.

Gluten-Free Vegan Pumpkin Cookies
These pumpkin chocolate chip cookies are completely flourless. But, the only “flour” you will need is oat flour! I looooove when healthy baking recipes only require one type of flour. That’s why I’ve made recipes like my protein cookie dough balls, gluten-free lava cakes, and my healthy sugar cookie fruit pizza. I give a full run down on oat flour here. Vegan Pumpkin Oatmeal Chocolate Chip Cookies
Just like my 6 Ingredient Homemade Graham Crackers, and my Vegan Lemon Cookies, this recipe requires no eggs or egg replacers! What do I mean by, “egg replacer”? An egg replacer is something to replace an egg! For example, I use a flax egg in my No-Bake Peanut Butter Cookie Dough Bars, Vegan Banana Bread, and Mini Chocolate Pies. You can also use chia eggs like I did in my Vegan Raspberry Brownies. But, that’s besides the point. The point is, YOU DON’T NEED ONE! YAY!


Ingredients for Healthy Pumpkin Cookies
You only need 6 main ingredients plus some spices to make these soft, gluten-free, pumpkin cookies! Here’s what you’ll need:
- Pumpkin Puree- make sure to get pure pumpkin, not pumpkin pie mix
- Melted Coconut Oil
- Pink Himalayan Salt
- Cinnamon- Read all about the health benefits of cinnamon here
- Nutmeg (optional)
- Oat Flour (I make my own in 3 steps) (can sub whole wheat flour)
- Baking Powder

Soft Vegan Pumpkin Chocolate Chip Cookies (Just Oat Flour!)

These soft vegan pumpkin chocolate chip cookies literally melt in your mouth. They’re made with oat flour and coconut sugar so they’re gluten-free and refined sugar-free too! Seriously the best healthy pumpkin cookies ever!
Ingredients
- ¾ Cup Pumpkin Puree
- ⅓ Cup Melted Coconut Oil (can sub grass fed butter or ghee)
- ½ Cup Coconut Sugar (super affordable brand)
- ⅛ tsp Pink Himalayan Salt
- 1½ tsp Cinnamon
- Pinch Nutmeg (optional)
- 1½ Cups Oat Flour (I make my own in 3 steps) (can sub whole wheat flour or 1:1 gluten-free flour)
- ¼ tsp Baking Powder
- ⅓ Cup Dark Chocolate Chips (this is a great dairy-free brand)
Instructions
1. Preheat oven to 350 F. and line a cookie sheet with parchment paper.
2. In a medium bowl, mix all ingredients together except oat flour, baking powder, and chocolate chips.
3. Fold in oat flour and baking powder. Then, fold in chocolate chips.
4. Transfer to cookie sheet using a medium cookie scoop (makes 12 cookies). Flatten the cookies down (they won’t spread when baked) and bake at 350 F. for 13-16 minutes until set on top, fragrant, and slightly golden.
5. Store in an airtight container on the counter for up to 4 days, in the refrigerator for up to a week, or freeze for 3 months!
