Best Gluten-Free Apple Muffins (Easy + Dairy-Free!)

These Gluten-Free Apple Muffins are so delicious! They’re easy to make and extremely fluffy and moist. All you need is one bowl and some very simple ingredients. You can make them mini muffins to serve at social gatherings or for your kids too. Dairy-free & kid approved!

Best Gluten-Free Apple Muffins

These Gluten-Free Apple Muffins are so delicious! They’re easy to make and extremely fluffy and moist. All you need is one bowl and some very simple ingredients. You can make them mini muffins to serve at social gatherings or for your kids too. Dairy-free & kid approved!

Cook Time 17 minutes
Total Time 27 minutes

Ingredients

Wet

  • 1 egg (see note 3 for vegan option)
  • 1 cup unsweetened applesauce
  • ½ cup coconut sugar
  • 1 tsp. vanilla bean paste or vanilla extract
  • ¼ cup refined coconut oil (melted)

Dry

Crumb Topping

  • ⅓ cup oat flour
  • ½ cup rolled oats or quick cooking oats
  • 2 Tbs. coconut sugar
  • 1 tsp. cinnamon
  • ⅛ tsp. pink Himalayan salt
  • 2½ Tbs. melted refined coconut oil or virgin coconut oil

Instructions

1. Preheat oven to 350 F. and grease 12 muffin tins with coconut oil. You may also use paper muffin liners or silicone muffin liners.

2. In a medium bowl, mix the egg, applesauce, coconut sugar, and vanilla until smooth. Add in coconut oil slowly and constantly mix to avoid solidifying. 

3. Add in all dry ingredients except diced apple and baking powder. Mix until well combined. Fold in diced apple pieces and baking powder until just combined. Using a large cookie scoop, transfer batter to muffin tins, filling each tin ¾ full (makes 12 muffins).

4. Make the crumb topping by adding all streusel ingredients to a medium bowl. Mix until combined and the mixture looks like coarse crumbs. Sprinkle crumb topping on each muffin (you don't have to use all the topping mix if you don't want to).

5. Bake at 350 F. for 17-20 minutes or until a toothpick comes out with a few moist crumbs. Allow to cool at least 20 minutes in muffin tins, then carefully remove and enjoy! Store in an airtight container on the counter for up to 2 days, in the refrigerator for up to 8 days, or freeze for up to 3 months.

Notes

1. Can I Make These Apple Muffins Mini Size?

Absolutely you can make these apple muffins mini-size! Just use a mini muffin pan. This is my favorite one from amazon! I’m obsessed with it and I didn’t think I would use it as much as I do. Honestly, I like making these muffins mini more than regular. They’re the perfect kid snack, treat when friends come over, or dessert! The baking time will vary on the smaller muffins. Bake them for 10-14 minutes until a toothpick comes out clean.

2. Can I Make This Apple Recipe In A Baking Dish?

Yes! What I love about this apple muffin recipe is that you can easily bake it in an 8x8-inch or 3-quart baking dish. I haven’t tested it in a loaf pan but I’m sure that would work as well. Just bake the recipe for longer, such as 25-40 minutes. Keep an eye on it as all ovens are different. Let me know how it turns out in the comments below! 🙂

3. Can I Make These Healthy Apple Muffins Vegan?

I haven’t tested making these muffins with a flax egg yet, but I’m sure it will work. Just replace the egg with 1 flax egg (1 Tbs. ground flax + 2 Tbs. water. Let thicken for 5 minutes). Let me know if you try this! I’d love to know how they turn out.

Gluten-Free Apple Cinnamon Muffins

I love making gluten-free recipes for all my gluten-intolerant friends. I am not gluten-free personally, but creating secretly healthy recipes usually ends in a gluten-free recipe, and I’m not mad about that. For this recipe we use a combination of oat flour and almond flour in this recipe to make the perfect gluten-free apple muffin. This “flour” combination gives the muffins fluff and also gives them moisture and a very tender texture. I’m sure you’re going to love them!

Easy Apple Muffins

Like I said before, you only need one bowl for this healthy muffin recipe. I hate using multiple bowls for baking.
