Banana Oatmeal Chocolate Chip Cookies

Oh bananas, how I love you. Bananas are probably one of my favorite fruits to bake with because they are a perfect natural sweetener and can act as an egg or oil substitute. Just check out any of my banana bread recipes to see for yourself. Some of my favorites are my Chocolate Chip Raspberry Banana Bread and Double Chocolate Banana Bread. I literally have around 10 different banana bread flavors if you’re ever feeling bored of the plain stuff.

BUT, if you’re here, banana bread is probably the last thing you want to make, because you want to make cookies! YAY! Well, let me tell you, these healthy banana cookies are the perfect recipe to use up those ripe bananas. And they’re even easier to make than banana bread!

Chewy Banana Chocolate Chip Cookies

Let’s talk cookies. There are some cookies that are actually desserts like my Chocolate Chip Cherry Cookies or my Smore’s cookies and some cookies that you can eat for breakfast, snacks or dessert! With intuitive eating, I believe cookies can be enjoyed any time of the day though (*cough cough* My Smart Sweet Tooth Program) … I guess what I’m trying to say is that some cookies are a bit more nutritious than others. These banana cookies are just that! Nutritious! And delicious! Oh, and did I mention how easy they are to make too?

These banana cookies are super versatile and that’s what I love about them.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 2 Medium Speckled Bananas (the riper the better!)
  • 1¼ Cups Oat Flour (make your own in these simple steps)
  • ¼ Cup Rolled Oats (can sub quick-cooking oats)
  • 3 Tbs Pure Maple Syrup (can sub honey)
  • 2-3 tsp Cinnamon (or to taste)
  • Pinch Pink Himalayan Salt
  • Optional: ⅓ Cup Dark Chocolate Chips
  • Optional: ⅓ Cup + 3 Tbs Peanut Butter (just peanuts and salt. This is my favorite brand. Use code “shh20” for free shipping!)

Instructions

1. Preheat oven to 350 F. and line a cookie sheet with parchment paper.

2. In a medium bowl, mash the banana with the back of a fork. Then add all other ingredients except chocolate chips. Mix until a dough forms.

3. Fold in chocolate chips or whatever add-in you'd like.

4. Dollop a spoonful of batter onto a parchment-lined baking sheet (should make about 11-12 cookies). Flatten until about ½ inch thick and bake at 350 F. 8-10 min.

5. Enjoy for breakfast, snacks, or dessert! Store in an airtight container on the counter for up to 6 days, refrigerate for up to 10 days or freeze for up to 3 months.

Notes

  1. If you’re looking to avoid added sugar completely, I’m sure you can completely omit the maple syrup and these cookies will still be delicious and plenty sweet!
