5 Ingredient Peanut Butter Sandwich Cookies (Girl Scout Copycat!)

If you’re looking for a classic homemade recipe for the Girl Scouts Peanut Butter Sandwich Cookies, this one is it! These cookies are crunchy and taste like the real thing. They’re easy to make and use just 5 simple ingredients like oat flour and pure maple syrup. Gluten-free, dairy-free, and vegan!
Ingredients
Cookie Ingredients
- ½ cup creamy natural peanut butter (use code "SHH20" for free shipping on my favorite clean nut butters)
- 3 Tbs. pure maple syrup (I buy mine in bulk)
- 1 tsp. vanilla extract
- ⅓ cup + 3 Tbs. oat flour (I make my own in 3 steps)
- ½ tsp. baking powder
Peanut Butter Filling
- ¼ cup creamy natural peanut butter
- ½ Tbs. pure maple syrup
Instructions
- Preheat oven to 350 F. and line a rimmed baking sheet with parchment paper.
- In a medium bowl, mix together cookie ingredients: peanut butter, maple syrup, and vanilla until smooth. Mix in oat flour and baking powder until well combined.
- Scoop out ½ Tbs. of dough at a time and roll into balls. Flatten between your palms and place on a baking sheet (makes about 20 cookies). Optional: Use a fork to gently press down on each cookie then turn the fork and go in the opposite direction (it should create a criss-cross pattern).
- Bake cookies at 350 F. for 10-15 minutes until lightly golden and set on top. Cool completely.
- While the cookies cool, use the same bowl to make the peanut butter filling by mixing the peanut butter and maple syrup together.
- Once cookies are completely cooled, flip half the cookies over. Spread the peanut butter filling onto cookie bottoms. Close with a top cookie. Enjoy! Store in an airtight container on the counter for up to 1 week, in the refrigerator for up to 2 weeks, or freeze for up to 3 months.

Mini Peanut Butter Cookie Sandwiches
The normal Girl Scout Do-Si-Dos cookies are pretty mini so that’s why I made my cookies the same way. We use ½ Tbs. of the cookie dough per cookie and it comes out to be the perfect little cookie size. Who doesn’t love eating mini foods?! It’s truly the best. I also love the mini size of these cookies because they’re great to serve at social gatherings, birthday parties, and more! Tiny single-serve cookies are just the best.
How To Make The Best Peanut Butter Sandwich Cookies
Like I said, these cookies could not be any easier to make. You just need 5 simple ingredients. You mix all the cookie ingredients in the bowl and then shape the dough into spheres. Flatten the spheres between your palms and then place on a parchment-lined baking tray. Bake the cookies until golden and fragrant and while they cool make the filling by combining the peanut butter and pure maple syrup. How Do The Calories In These Healthy Peanut Butter Cookies Compare To The Girl Scout Do-Si-Do’s?
I will say, the calories in these healthy peanut butter cookies are BETTER for you calories. Instead of artificial or processed ingredients from the girl scout cookies, you get all real food ingredients that will make you feel good after eating them. No sugar crashes or anything. These cookies are actually a healthy snack or dessert option because they are loaded with protein, complex carbs, and healthy fats. You just can’t go wrong. All in all, these are way better for you and taste better than store bought peanut butter sandwich cookies. Full calories and macros are listed at the very bottom of the recipe card.
Now let’s talk a little about peanut butter sandwich cookies brands that might compare to these cookies. Obviously, the peanut butter sandwich cookies Girl Scouts brand are the first I think of, but those just aren’t healthy in the slightest. Other brands that I would consider purchasing that are “healthier” are the Simple Mills cookies. The ingredients are solid. However, you will be paying quite a bit more for them. That’s why I really like making mine because they are more affordable.
Old School Peanut Butter Sandwich Cookies
I don’t know about you, but these crunchy peanut butter cookies don’t get any more classic. No they aren’t soft peanut butter sandwich cookies, but they give a texture similar to a nutter butter which I love! And recipe testing for a crunchy cookie can be difficult. They are just like the original girl scout cookie but made with healthier gluten-free and vegan ingredients. I love how I can serve these cookies to my dairy-free and gluten-free friends for them to enjoy! Nothing brings me more happiness than knowing everyone can enjoy these delicious bite-sized peanut butter sandwich cookies. If you’re looking for a softer peanut butter cookie there is a peanut butter sandwich cookies America’s test kitchen recipe. However you have to be a member to get the recipe and I know it doesn’t use gluten-free or vegan ingredients like my recipe does.
